My chipotle taco chili is perfect for this time of year. It’s everything you love about chili, ground beef, beans, veggies, and tomatoes, but made extra special and a little spicy with bold, chipotle flavors. It’s a fun and tasty mashup of chili and taco night!

how to make chipotle taco chili
The thing I love about chili is it’s a low and slow cooking process. That means a little work up front then you just let it simmer and do it’s thing while you can do other things (like watch football or enjoy your day!).
First, you blend together the chipotle chili peppers and crushed fire roasted tomatoes. Both of these ingredients add a smokey depth of flavor that makes this dish shine. The peppers also add a little spicy surprise!
Next, heat olive oil in a large dutch oven or soup pot. Add the onions and peppers. This again helps add depth of flavor that makes the chili truly flavorful. Add the fresh, diced garlic and cook for 2-3 minutes or until fragrant.
Then, you add the ground sirloin. I went with sirloin because it’s a leaner ground beef, so less fat and a bit healthier. I also decided to do ground beef so fit the taco theme. But you could also use ground chicken or turkey!
You will next add the spices, chili powder, chipotle chili powder, cumin, paprika, garlic, and of course, salt. These spices help wake up the chili and add tons of flavor. Once those are fragrant, you will add tomatoes paste and cook for 1-2 minutes. I love how concentrated the tomato paste is because it really helps brings richness to the dish.
Finally, add the remaining ingredients, beer, beef broth, brown sugar, Worcestershire sauce, beans and the crushed fire roasted chipotle pepper mix. Now the work is done and you just let let chili simmer and develop flavor for about 45 minutes. Once it’s done, taste, adjust seasonings as necessary, then enjoy!

How to top this chipotle taco chili
I love to top the chili with all the taco fixings. I’m talking dollops of greek yogurt (or sour cream), shredded cheddar cheese, jalapeños, cilantro, and tortilla chips. With the toppings and chipotle flavors, this really is just like a taco in a bowl! So good!

Chipotle Taco Chili
A cozy, delicious dish for Fall!
Ingredients
Chili
- 1 28 oz can O Organics® crushed fire roasted tomatoes
- 1-2 chipotle peppers in adobo sauce plus 1 teaspoon adobo sauce
- 1-2 tablespoons olive oil
- 1 small white or sweet onion diced
- 1 small red bell pepper diced
- 3-4 garlic cloves
- 1.2-1.5 pounds ground sirloin
- 2 tablespoons O Organics® chili powder
- 1/2 teaspoon chipotle chili powder
- 2 teaspoons O Organics® cumin
- 1/2 teaspoon onion powder
- 1 teaspoon O Organics® garlic powder
- 1/2 teaspoon paprika
- 2 teaspoon salt
- 1/4 cup O Organics® tomato paste
- 2 tablespoons Worcestershire
- 1 tablespoon brown sugar
- 1/2 cup O Organics® beef broth
- 1/2 cup light beer or lager
- 1 8 oz can O Organics® tomato sauce
- 1 15 oz can O Organics® pinto beans drained and rinsed
- 1 15 oz can O Organics® black beans drained and rinsed
Toppings
- 1/2 cup greek yogurt
- 1/2 cup shredded sharp cheddar cheese
- 2 tablespoons roughly chopped cilantro
- Tortilla chips
Instructions

In a food processor, add the crushed tomatoes and adobo peppers and blend until smooth, about 30 seconds. Set aside.

Heat 1 tablespoon olive oil over medium high heat in a large pot or dutch oven. Add in deiced onions and peppers and saute for3-5 minutes, stirring frequently. Lower the heat to medium and add in garlic and cook for another 2-3 minutes, or until fragrant.

Add in ground sirloin and break up the meat; cooking until slightly browned on the inside and just abut cooked through. Next add in the spices and cook until the spices are fragrant and coat the meat, about 20 seconds.

Next, add in the tomato paste and cook until it turns a rusty red color, about 1-2 minutes.

Next add in crushed tomatoes, beef broth, beer, brown sugar, Worcestershire sauce, beans. Bring to a boil, then reduce heat and simmer for 45 minutes to an hour or until chili thickens and flavors come together. Taste and adjust seasonings as necessary.

Garnish chili with Greek yogurt, tortilla chips, cheese, and cilantro, if desired.
