the brownie cup base

The brownie cups are made using Jewel Osco’s Open Nature® gluten-free brownie mix. These brownies are made certifiably and undetectably gluten-free (made using rice and tapioca flours), made with real, simple ingredients from nature, and without any artificial flavors. They seriously taste just as good as regular brownie mixes.
Plus, I made them into cute brownie cups so they act as the “bowl” for these ice cream sundaes. To make the brownie cups, first, bake the brownie batter in muffin tins (the batter create about 10 brownie cups) and bake for 18-22 minutes (they should be crispy around the edges and still gooey on the inside). While the brownies are still slightly warm, take a small measuring cup and lightly press down on the brownies to form a small cavity in the middle. This creates a perfect little spot for the ice cream to sit.

Jewel Osco’s Open Nature Line® also contains delicious, light ice cream options for topping the brownie cups. The clever name of the light ice cream is Scandal-less. I love this light ice cream because it taste delicious, with a rich flavor and creamy texture. Plus contains 60% less fat and 45% less calories than regular ice cream.

the dark chocolate ganache
No ice cream sundae is complete without a great sauce. These delicious and healthy brownie ice cream sundaes are topped with a dark chocolate ganache using O Organic’s® dark chocolate chunks. These chocolate chunks are 72% cacao, made using fair trade certified cocoa, and only 4 grams of sugar per serving.
To make the ganache, simply combine heavy cream or full fat coconut milk and the dark chocolate chunks and microwave, on 50% power, for 45 seconds to a minutes and stir until all the chocolate is fully melted and smooth. Let cool slightly then drizzle over the sundaes.

how to serve
The brownie cups provide a cute, fun presentation.
Take one of the brownie cups, top it with a scoop (or two!) of your favorite flavor of Scandel-less Open Nature ice cream. Finally, top it with warm ganache, a dollop pf whipped cream, and a dash of sprinkles.

Healthy Brownie Cup Ice Cream Sundaes
Ingredients
- 1 16 oz box Open Nature Gluten-Free Brownie Mix
- 1 stick of butter or 1/2 cup coconut oil melted
- 2 eggs room temperature
- 2 tablespoons water
- 1 teaspoon vanilla
- 4 pints Open Nature Light Ice Cream I used peanut butter cup, cookie dough, salted caramel, and cookies and cream flavors
- 1 cup O Organics 72% cocoa bittersweet chocolate chunks
- 1/2 cup heavy cream or full fat coconut milk
- 1 tub whipped cream
- 1/4 cup sprinkles optional
Instructions

Preheat the oven to 350 degrees. Grease 10 muffin cavities.

In a large bowl, combine the melted butter (or coconut oil), eggs, water, and vanilla and whisk until fully combined. Add in the brownie mix and gently mix until just combined. Divide the batter between the 10 muffin cavities. Bake for 18-22 minutes or until the edges are crisp and the inside is just set. Allow to cool slightly, then, using a small measuring cup, press down on the warm brownies to create a small cavity for the ice cream.

Remove ice cream from freezer at least 10 minutes before serving so it’s softened and easier to scoop. Scoop desired amount of ice cream to top each brownie cup.
