Hi! Welcome! My name is Dani Davis, the photographer, recipe creator, author, and food lover behind this blog. I created the blog to show the world healthy cooking does not have to be boring and you can even enjoy treats such as cupcakes, burgers, and cocktails without feeling guilty…..just by using the right ingredients. I am obsessed with cooking and eating and am excited to share my creations with you!
The kitchen is my happy place. I inherited a love for cooking from my parents. My mom cooked dinner for my three brothers and I every week day night and had some great signature dishes, such as her smoked chicken lasagna. My dad specialized in Italian dishes and gave creative spins to pastas. They instilled that love of cooking in me at an early age. My prized possession as a kid was my easy-bake oven and I happily volunteered to cook dinner as my weekly chore (I was less eager to do the dishes) My brothers even enjoy cooking and when we are all home its a battle who will rule the kitchen (well besides my little brother, he prefers to be served).
That love for cooking still remains with me today. Going to the grocery store is one of my favorite activities (keep in mind my local grocery has a wine bar). I love to spend Friday nights at home with my husband, drinking red wine, jamming to music, and making delicious dinners. I also spend countless hours reading cookbooks, skimming through food magazines, and watching the Food Network to learn cooking techniques and get inspiration for new recipes.
Why focus on healthy recipes? Well, I am a bit of a health nut. I believe food is fuel and eating fresh nutritious food makes you feel energized and happy. I do my best to maintain a balanced, healthy diet. This is not to say I don’t like to eat….in fact I love to eat! And I love to eat good food. Dessert especially is my weakness (life is too short to say no to cake). That is why I am always trying to find inventive ways to give my favorite dishes a healthy spin.
I have been cooking for my husband since we started dating and he is my official taste tester (he is a picky eater, so I know if he approves, it’s good). My husband inspired me to share my recipes with the rest of the world and create this blog. He even came up with the name, Danilicious. He is my best friend, sous chef, and dish washer, and he is involved in a lot of my recipe creations (plus, he is super handsome).
My other favorite things are exploring Chicago with my husband (especially trying new restaurants in this great food city), traveling (I have studied abroad three times, in Spain, England, and Ireland), working out (especially running and HIIT classes), throwing themed parties (my mom is the hostess with the mostess and I strive to follow in her footsteps), and spending time with my big crazy family.
