I am a huge granola fan – it’s one of my favorite snacks and I eat it almost every day. I realized that I didn’t have a granola recipe on the blog and it was time to change that, so I created this delicious, crunchy peanut butter and banana chip granola. I made it with rolled oats, cashews, almonds, and banana chips. Also, it’s low in sugar and sweetened only with pure maple syrup and organic banana chips.
This granola is bursting with big peanut butter flavor that makes this granola rich and satisfying. The flavor provided by the banana chips pairs perfectly with the peanut butter and adds an extra crunch. It’s the perfect blend of flavors and textures!

how to make peanut peanut butter banana chip granola
It’s actually easy to make homemade granola! Plus, you control the amounts and types of ingredients used so you can make it healthier and not chalked full of sugar and processed foods. I used all organic foods using Jewel-Osco’s O Organics® so this granola is unprocessed and nutritious!
First, in a small food processor, blend 1/4 cup oats and 1/4 cup banana chips into a flour like consistency. The banana chip powder helps add extra sweetness and the oat flour helps create a crunchy granola.
Mix the oat banana chip flour with the other dry ingredients. Set aside.
Next, in a microwave safe bowl, microwave the peanut butter, coconut oil, and maple syrup in increments of 30 seconds, until the coconut oil is fully melted (about a minute). Stir until the mixture is smooth. Pour the peanut butter mixture into the oat and nut mixture.
Finally, stir the mixture until it’s well combined and spread the granola out evenly on a parchment lined baking sheet. Bake at 325 degrees for 25-30 minutes.
PRO TIP: do not stir the granola while it bakes. Instead, allow for it to clump together during baking. At the end, you can break it apart. This allows it to form large crispy clusters.

how to enjoy this granola
My favorite way to enjoy this granola is with Greek yogurt and fresh berries. My husband prefers to eat it on its own as a snack. Finally, you can pour ice cold milk over it and eat it like cereal. Any way, it’s delicious!

Peanut Butter Banana Chip Granola
Ingredients
- 1/2 cup O Organics® Old Fashioned Creamy Peanut Butter
- 1/3 cup O Organics® Maple Syrup
- 1/4 cup coconut oil solid form
- 2 1/4 cup rolled oats Gluten-Free
- 1/2 cup O Organics® Cashews Roasted, Salted
- 1/2 cup O Organics® Almonds Roasted Unsalted
- 1 cup O Organics® Banana Chips
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Instructions

Pre-heat oven to 325 degrees.

In a small food processor, blend 1/4 cup of the banana chips and 1/4 cup oats into a flour like consistency.

Rough chop the remaining banana chips, plus almonds and cashews.

In a large bowl, add the banana chip oat flour, oats, cinnamon salt, and chopped banana chips, almonds, and cashews, and mix until well combined. Set aside.

In a microwave safe bowl, add peanut butter, maple syrup, and coconut oil and microwave in increments of 30 seconds until the coconut oil is melted (about 1 minute). Stir until well-combined. Stir in the vanilla.

Pour the peanut butter mixture into the oats mixture and stir until well-combined.

Spread granola out evenly onto a parchment lined baking sheet.

Bake for 25-30 minutes or until the granola is golden brown. Do not stir or mix while baking (this will allow the granola to form big clusters and become crispy). Allow to cool completely.

Break granola into chunks.
