Happy Cinco De Mayo! I have the perfect meal for you to celebrate this fun Holiday! My new healthy Fajita Tostadas with Spicy Ranch paired with my crisp and sweet Rose Margaritas!
These tostadas come together in less than 30 minutes, are packed full of bold flavors, and made with wholesome, good for you ingredients. Plus, they combine your favorite taco with fajita flavors in tostadas form for a creative, interesting dinner!
These fajita tostadas feature crispy whole wheat tortillas topped with melty sharp cheddar cheese, juicy and flavorful ground beef, sautéed peppers and onions, and creamy avocado. Then, garnished with fresh lime juice and cilantro and smothered in an addictive spicy ranch sauce. Yum!

Ingredients
Here’s what you need to make this dish:
- whole wheat tortillas, baed until crispy and golden brown, the tortillas are the base of this dish!
- ground beef, perfect for this easy but flavorful dish as ground beef takes on flavors well plus cooks quickly!
- spices, the ground beef is seasoned to perfection with a simple blend of chili powder, smoked paprika, garlic salt, dried oregano, and onion powder. These bold spices amp up this dish!
- red pepper and red onion, sautéed until sweet and blistered, the peppers and onions provide tons of flavor and the fajita vibes.
- avocado, adds a cool, creamy element that cuts through the spice and richness
- lime juice + cilantro, the perfect garnish for any Mexican dish
- spicy ranch, a combination of greek yogurt ranch + buffalo sauce makes for an addictive and spicy sauce for this fajita tostadas!

How to make these healthy fajita tostadas
This dish comes together in less than 30 minutes.
First, pre-heat the oven to 400 degrees. Spray 6-8 small whole wheat tortillas with cooking spray and sprinkle with garlic salt. Bake for about 6-10 minutes, flipping halfway through, or until toasted and golden brown. Top each tortilla with cheese and bake for an additional 2 minutes or just until cheese is melted.
In a large skillet, heat 1 tablespoon oil over medium-high heat. Add ground beef and cook 3 minutes per side or until each side is golden brown and slightly charred. Break up the ground beef and cook until no longer pink in the middle. Add in worcestershire sauce and spices and mix until well-incorporated. Remove the meat from the pan and wipe the pan clean.
Heat another tablespoon of oil over medium high heat. Add sliced peppers and onion with a generous pinch of salt and cook until slightly wilted and charred, 5-8 minutes.
For the spicy ranch, combine a 1/2 cup of Greek yogurt ranch (I use this kind) and 1 tablespoon buffalo sauce. It’s super simple but soooo flavorful!
Time to build your tostada! Add a scoop of ground beef to each tostada and a generous portion of sautéed peppers and onions. Top with slices of avocado, lime juice, and cilantro. Squeeze on a healthy pour of the spicy ranch.

Variations
These tostadas are easy to customize using what you love and have on hand:
- I prefer whole wheat tortillas for that added fiber and nutrients, but if you do not have them or like them, use white or corn tortillas instead
- You can change up the spice blend – add cumin for those traditional taco seasoning flavor or add cayenne for more spice!
- Get creative with your toppings – add a dollop of sour cream or pickled red onion for tang. Instead of sliced avocado, add guacamole. You can top these any way you like!
- If you do not like or prefer ground beef, you can use ground chicken or turkey instead! Or if you want to keep it vegetarian, sub the meat for black beans or roasted sweet potatoes!

How is this dish healthy?
Yes! I did several things to lighten it up! One I used whole wheat tortillas, which are packed with fiber and nutrients. I also toasted them to get the crunch instead of frying them. Some other simple swaps I incorporated is using a lean ground beef for less fat. Plus, I used greek yogurt ranch, which is lower in calories and fat. Finally, I loaded these with the sautéed veggies for extra veggies nutrients and goodness!
