These flavor-packed, colorful tacos contain perfectly crispy and spicy air-fried buffalo cauliflower nuggets, a tangy purple cabbage slaw, fresh avocado, and a creamy, vibrant avocado ranch. This may be my favorite Danilicious dish to date! I’m obsessed!

I have been wanting an air fryer for some time now because I love the idea of being able to make “fried” foods without all the greasy, fatty oil.
Luckily, I was gifted an air fryer from my friends at Oster and it’s as magical and amazing as I imagined. The Oster Countertop Oven with Air Fryer is an all-in-one appliance that lets you air fry, bake, convection bake, toast, broil, and warm. Air frying uses just a tablespoon or less of oil, which is 99.5% less oil than a 3.7L deep fryer, for healthier versions of fried favorites. You can use it to make just about everything from healthier versions of fries and chicken wings to cakes and pizzas!

I used it to make these mega-delicious, spicy, creamy, addictive “fried” buffalo tacos with avocado ranch.
It’s seriously so so good….and I think its my best recipe yet.
Let’s get to cooking!
The first step is making the air-fried cauliflower nuggets. Set your Oster air fryer to 400 degrees and the air fryer setting and allow to pre-heat. Toss your cauliflower pieces with olive oil and spices and place in the airy fryer basket. Cook the cauliflower pieces for 20 minutes or until golden brown and crispy. Once they are cooked and cooled slightly, toss with your favorite buffalo sauce.
The air fryer turns the cauliflower into these crispy, golden-brown heavenly nuggets. They actually taste just like they were fried, but without all that greasy excess oil! I literally had to put them out of my reach because I couldn’t stop eating them.

Next, make the avocado ranch. To me, buffalo and ranch go hand in hand, so I had to pair these tacos with a creamy ranch-like dressing. Its super simple to make. Just add all of the dressing ingredients – an avocado, greek yogurt, milk, herbs, lime juice, and spices – to a food processor and blend until smooth and creamy. The sauce is bursting with flavor and is a must to perfect and complete these tacos.
I also tossed together the sliced purple cabbage with salt and lime juice to make a super quick and easy slaw. The lime juice adds brightness and acidity to cut through the richness of the slaw and helps soften the cabbage slightly without removing all the crunch.
Finally, we can assemble the tacos. Take a charred white corn whole grain tortilla (I always recommending charring your corn tortillas over a burner or in a skillet before using as it takes away any raw flour taste and the charred bits add extra character and flavor to the dish) and top with purple cabbage slaw, “fried” buffalo cauliflower nuggets, avocado slices, and the avocado ranch. Garnish with some chopped cilantro leaves.

Bam! It’s time for “Fried” Buffalo Cauliflower Tacos with Avocado Ranch MAGIC!!
I did a little happy dance after one bite of these tacos. They were everything I wanted them to be and more. The cauliflower nuggets are crispy, perfectly seasoned, and covered in a luscious spicy sauce. The simple purple cabbage slaw is acidic and bright. The avocado ranch. You guys. I just can’t. It’s so darn good. Its creamy and packed with BIG herbaceous flavor. I’m going to put it on just about everything. All of these flavors combined into one taco is EPIC.

“Fried” Buffalo Cauliflower Tacos with Avocado Ranch
Ingredients
Cauliflower
- 1 head cauliflower cut into florets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- 1/4 teaspoon buffalo sauce
Avocado Ranch
- 1 avocado
- ¼ cup Greek yogurt
- Juice of half a lime
- ¼ cup milk
- 3 gloves garlic
- ¼ cup parsley
- ¼ cup cilantro
- 1 teaspoon onion powder
- 1 teaspoon onion flakes
- ½ teaspoon paprika
- ¼ teaspoon cayenne
- 1 teaspoon salt
- Pepper to taste
Tacos
- 4-6 White Corn Whole Grain Tortillas
- 1/2 purple cabbage sliced thinly
- Juice of half a lime
- Salt and pepper to taste
- 1 avocado sliced
- Cilantro for garnish
Instructions

Set your Oster to air fry setting and 400 degrees and allow to preheat.

Toss cauliflower florets with olive oil and spices. Place in a air fryer basket and allow to cook for 20 minutes, until crispy and golden brown. Toss with buffalo sauce.

For avocado ranch, add all the ingredients to a food processor and process until smooth and creamy.

For tacos, lightly char the tortilla shells on an open burner flame or in a skillet. Toss lime juice, cabbage, and salt. Top charred tortillas with dressed purple cabbage, buffalo cauliflower pieces, avocado slices, & avocado ranch. Garnish with cilantro.
