A colorful and flavorful combination of roasted beets and sweet potato, pesto, goat cheese, arugula, pickled red onion, and avocado piled high on 7-grain bread. There is nothing boring about this ultimate veggie sandwich – it’s a flavorful explosion!!

I know what you might be thinking….
Veggie sandwich. Boring. Not my thang!
But I promise you this sandwich is bursting with flavor. Don’t underestimate the power of veggies. This sandwich is worth your while!
It just might become your favorite sandwich of all time. Just saying!

Let’s make this sandwich!
The star (and “meat”) of the sandwich are the roasted sweet potatoes and beets. Both are root vegetables with a heartier, meatier texture that make this sandwich delicious and filling.
Pre-heat the oven to 400 degrees. Cut both the sweet potato (you can leave the skin on or take it off) and peeled beet into equal sized rounds. Drizzle with olive oil and sea salt and roast for about 25 minutes, flipping half way through. You want the veggies to be caramelized and golden brown on the outside yet tender on the inside. That is all the cooking required for this sandwich. The rest is assembly.

Alright….let’s make these sandwich. Take 1 slice of the 7-grain bread and slather it with your favorite pesto (it can be store bought or you can use this recipe here). Top with avocado slices and roasted beets.
Slather the other slices of 7-grain bread with goat cheese (I used an herb goat cheese but regular works too). Top with arugula, pickled red onion (you can use this recipe or use storebought as well), and roasted sweet potatoes.
Combine the opposite halves of the sandwich to make one big sandwich. Cut in half….and take a bite.
Bam! So much flavor! I know!

The pesto is bright and herbaceous. The goat cheese is tangy and the avocado rich and creamy. The roasted root veggies are meaty and tender with sweet, earthy flavors. The pickled red onion adds a nice acidic pop to cut through the richness. And the arugula offers a nice peppery bite.

There is a lot happening in this sandwich but all the flavors and textures work together to create magic. It’s a symphony of flavors bursting in your mouth! And it’s totally worth making….and devouring!

The Ultimate Veggie Sandwich
Ingredients
- 1 medium sized sweet potato cut into rounds
- 1 medium sized beet cut peeled and cut into rounds
- 1/2 cup pickled red onion
- 1/2 cup pesto
- 1/2 cup goat cheese
- 1/2 cup arugula
- 1/2 avocado thinly sliced
- 4 slices angelic bakehouse whole grain bread
Instructions

Pre-heat oven to 400 degrees. Drizzle olive oil and sea salt over sweet potato and beet rounds and make sure all the veggies are well-coated. Roast in the oven for 20-25 minutes until veggies are fully cooked and tender, flipping half way through.

Take on slice of bread (can be toasted or not) and slather with favorite pesto. Top with avocado and slices and roasted beets. Take the other slice of bread, and slather with goat cheese spread. Top with arugula, pickled red onion, and roasted sweet potatoes.

Combine bread slices. Cut in half.
