These tropical bliss balls are easy to make, addictively delicious, packed full of superfood ingredients, and bursting with tropical flavors that will transport you right to warmer, sunnier days!

How do you usually spend your Sundays?! Are you productive and get things done like meal prep? Or do you prefer a more relaxing Sunday?
I’m Team Lazy Sunday! I like to spend this day to relax and rest up for the week ahead.
Admittedly, I’m also not a huge meal prepper. I work from home often (I know, lucky me) so I can start dinner earlier or do a little meal prep during the day. I typically spend Sundays to plan my meals for the week and write them out so I know what to grab at the store, but I don’t do a lot of actual cooking beforehand.
But there is one thing I do prefer to make ahead so I have them on hand all week – and that is delicious, healthy snacks, like these tropical bliss balls. They only take about 15 minutes to make and only require one-bowl, so it does not take away too much time from watching movies or catching up on cooking shows.
Plus, I love having a good, healthy, superfood packed snack in the fridge I can grab before/after a workout or when I am on the go for work. It ensures I still eat healthy, balanced foods when life gets hectic during the week.

You will only need three cooking tools to make this delicious snack:

In the food processor, add all of the ingredients. I went in a tropical direction to provide a little sunshine in my life during this cold spell in Chicago. I still can’t believe it was -18 this week in the city! But these little bad boys will transport you right to a beach – they have flavors like coconut, ginger, turmeric, mango and honey. Aloha!
Plus, this bite size snack is full of superfoods! The cashews are rich with vitamin E and minerals; oats are a gluten-free whole grain and a great source of important vitamins, minerals, fiber and antioxidants; mangos help promote gut health and can boost immunity; and turmeric contains compounds with medical properties that can help fight inflammation and is a very strong antioxidant.

Blend all of the ingredients until they are well-combined and resemble a wet sand. Use an ice cream scoop (or spoon will work too) to evenly divide the mixture into balls. Roll the balls in extra shredded coconut. Place the balls in a food storage container and place in fridge to set up for at least an hour.
That is seriously it. We are already done. You can now go back to the couch and binge your favorite Netflix show (I’m currently watching You and its strangely addicting!).
You will be so glad you took 15 minutes out of your day to make this snack. They are creamy and a bit nutty from the cashew butter and oats, have nice texture from the chunks of cashews, big tropical flavor from the mango, coconut, and spices, the perfect balance of sweetness from the honey, and a nice little spicy kick from the ginger and turmeric. Its amazing how much flavor can be packed into such a small bite!

Tropical Bliss Balls
Ingredients
- 1/2 cup roasted unsalted cashews
- 1/2 cup oats
- 1/2 cup cashew butter
- 3 tablespoons coconut oil
- 3 tablespoons honey
- 1/3 cup coconut flakes
- 1/3 cup chopped dried mango
- 1 teaspoon turmeric
- 1 teaspoon ginger
- 1/2 teaspoon cinnamon
- More coconut for coating
Instructions

In a food processor, add all of the ingredients and process until everything is well-combined and it forms a wet sandy mixture.

Use an ice cream scoop or spoon to evenly divide the mixture into balls.

Roll in extra coconut.

Place in fridge and allow to set for at least an hour.
