I’m slightly obsessed with avocado toast. It’s simple, versatile, healthy and delicious.
Plus, I’m into anything with avocado!
I got my parent’s on the avocado toast bandwagon. It’s become a breakfast staple for them now. My dad proudly sends me a text just about overtime they make it.
BUT, my parents get bored eating the same thing over and over again. So my dad constantly requests that I think of new ways to spice up traditional avocado toast.
My dad loves anything Italian (my original last name was DeFranco after all) so I wanted to give avocado toast some Italian flare. Bruschetta and avocado toast seemed like a match made in toast heaven.
Let’s get to cooking.
The beauty of avocado toast is it requires very minimal effort and cooking to put together. But it seems super fancy and elegant. And taste amazing!
This dish comes together in under 10 minutes.
First, I marinated the cherry tomatoes in balsamic, olive oil, salt and pepper. You can add a little fresh garlic too for a nice bite. This is what gives it the bruschetta feel. You need to make this part of the dish first so the tomatoes can marinate and soak up the flavors of the balsamic and olive oil. If you have more time, you can even let the tomatoes marinate for an hour or so.
Next, make the spread by combining the ricotta, goat cheese, and lemon juice. This adds a nice creamy element to the dish.
Finally, slice up the avocado and toast the bread.
I used angelic bakehouse for my bread. It’s my favorite whole wheat bread. It’s made with wholesome ingredients and is low in calories and carbs, but actually taste great and hearty.
To assemble, spread the ricotta mix on each slice of bread and top with avocado slices, tomatoes, and fresh basil leaves.

The toast is quite magical. You have the nice crunch from the delicious whole wheat toasted bread. The ricotta spread is creamy from the ricotta and tangy from the goat cheese. You have additional creaminess from the avocado. And the tomatoes bring it all together with a pop of freshness and acidity. Bruschetta and avocado toast were meant to be combined!

Bruschetta Avocado Toast
Whole wheat toast topped with ricotta goat cheese spread, sliced avocado, and balsamic marinated cherry tomatoes.
Ingredients
- 1/4 cup ricotta part skim
- 1 tablespoon herb and garlic goat cheese
- 1 teaspoon lemon juice juice of one wedge of lemon
- 1/4 cup cherry tomatoes sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon fresh grated garlic
- pinch of pepper
- 1/2 teaspoon sea salt
- 1/2 avocado sliced
- 4 basil leaves
- 2 slices whole wheat bread I used Angelic Bakehouse
Instructions

Marinate the tomatoes by adding the cherry tomatoes, balsamic, olive oil, garlic, salt and pepper to a bowl and let sit while you assemble the rest of the toast. You can marinate the tomatoes before hand and let sit in fridge for longer if you have the time.

Combine the ricotta, goat cheese, lemon juice and pinch of salt and mix until well combined.

Toast the bread slices to your liking.

Spread the ricotta mix on both slices of bread. Top each slice with avocado slices, marinated cherry tomatoes, and basil.
