I’ve been working on perfecting a healthy brownie recipe for some time now, but have had very little success. They’ve been either too dense, cakey, bland tasting, rich, crumbly, or dry. Never quite how I wanted them to turn out (*sigh*).
I even gave up for a while thinking maybe it was impossible to create a good tasting brownie that was also made with good for you ingredients.
Until now….I finally perfected the best (truly heavenly) healthy brownie recipe.

They are perfectly sweet, have a nice, fudgy texture (I’m definitely team fudgy when it comes to brownies), and bursting with big, rich chocolate flavor.

Best yet, these brownies are secretly healthy and made with wholesome, natural ingredients, like sweet potatoes and Whole Earth natural sweetener.
Sweet potatoes may seem like an odd ingredient for brownies, but they totally work! The sweet potatoes add moisture and richness so you can lower the amount of oil/fat you use and add natural sweetness so you can lower the amount of sugar you use. Plus, sweet potatoes are a great source of vitamins, minerals, and fiber and are an antioxidant powerhouse, so make these brownies an actual nutritious dessert.

This dessert is a one-bowl wonder! Yep. You only need one bowl. That’s it.
Healthy brownies with easy clean up – it almost seems too good to be true.

Here is the quick baking rundown. Get your one bowl (make sure its microwave safe). Melt dark chocolate chips and coconut oil in the microwave (50% power in 30 sec increments so it doesn’t seize). Add in roasted sweet potatoes, Whole Earth baking sugar blend, and vanilla. Beat in eggs one at a time. Shift in dry ingredients, cocoa powder for extra chocolate goodness, oat flour for stability (plus keeps this brownies GF), and baking soda for a little extra rise, and mix until everything is well-incorporated (some lumps are ok). Pour into a greased 8×8 baking dish and bake at 350 degrees for 20-25 minutes (less time = more fudge-like texture).
Bam done!

And if you’re looking for some extra chocolatey goodness, then I highly recommend making the sweet potato chocolate frosting. You just need to combine one roasted sweet potato, 1/4 cup cocoa powder, Whole Earth honey or agave, and vanilla. It becomes a thick, delectable frosting that adds extra richness and creaminess to the brownies.
And if you are feeling fancy, top these bad boys with a sprinkle of flaky sea salt and mini dark chocolate chips.

The Best Healthier Brownies
They have an intense chocolate flavor and perfect fudgy texture, plus the perfect balance of sweetness.
Ingredients
Brownies
- 3/4 cup dark chocolate chips I used a dairy free kind
- 1/4 cup coconut oil
- 1 cup roasted mashed sweet potato
- 2 eggs room temp
- 1/2 cup Whole Earth Baking Blend
- 1/4 cup cocoa powder
- 1/4 cup oat flour or whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- One pinch sea salt
Frosting
- 1 cup roasted mashed sweet potato
- 1/4 cup cocoa powder
- 3-4 tablespoons Whole Earth honey or agave
- 1 teaspoon vanilla
Instructions

Preheat oven to 350 degrees grease a 8×8” baking pan and set aside.

Melt chocolate & coconut oil together in the microwave. Mix until completely melted.

Mix in Whole Earth baking blend sugar, sweet potatoes, and vanilla.

Mix in eggs, one at a time until the batter is completely smooth.

Shift in dry ingredients, whisk until just incorporated.

Pour batter into prepared pan and bake for 20 to 25 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. Less time will yield a gooier brownie (I baked mine for 22 min).

When brownies are finished baking, allow to cool completely and then remove from pan.

To make frosting, whisk together all the ingredients until smooth and creamy.

Frost the brownies and cut into 9/16 squares.
