Ingredients
1medium sized sweet potatocut into rounds
1medium sized beetcut peeled and cut into rounds
1/2cuppickled red onion
1/2cuppesto
1/2cupgoat cheese
1/2cuparugula
1/2avocadothinly sliced
4slicesangelic bakehouse whole grain bread
Instructions
Pre-heat oven to 400 degrees. Drizzle olive oil and sea salt over sweet potato and beet rounds and make sure all the veggies are well-coated. Roast in the oven for 20-25 minutes until veggies are fully cooked and tender, flipping half way through.
Take on slice of bread (can be toasted or not) and slather with favorite pesto. Top with avocado and slices and roasted beets. Take the other slice of bread, and slather with goat cheese spread. Top with arugula, pickled red onion, and roasted sweet potatoes.
