Refined sugar-free & gluten-free granola cups made with oats, chia seeds, and nuts and topped with your favorite vanilla yogurt, berries, lemon zest and a touch of honey. An easy and elegant breakfast treat perfect for brunch or any day of the week!

Yogurt, berries, and granola are one of my favorite combinations. I eat it constantly for breakfast or an afternoon snack. It’s the perfect mix of sweet, creamy, and crunchy that I just love!
Last weekend, one of our friends had us and a few friends over for brunch where everyone brought over a dish. I knew I wanted to bring something that incorporated my favorite treat.
Just bringing a thing of yogurt and berries seemed to simple. I decided to take it up a notch and make it a bit more elegant and interesting. I created granola cups that look like cute mini tart shells. Then I filled them with my favorite yogurt and topped them with berries, lemon zest, and honey.

Viola! I transformed a classic breakfast meal into an elegant, crowd-pleasing treat. All my friends thought they were adorable and a fun way to eat yogurt and berries. There’s just something about mini and bite size treats that wins everyone over!
Plus, It’s almost like eating breakfast for dessert. Who doesn’t love that?!? But these treats are actually good for you and made with high protein yogurt, fiber-rich oats, no refined sugar, and heart healthy berries.
Best yet, they are super simple to make, so it looks like you put a lot of effort into your brunch dish but in reality you didn’t spend too much time in the kitchen. Brunch win!

Let’s get to baking!
Here is the quick rundown: combine melted coconut oil and sugars and stir until sugar is dissolved. Stir in remaining ingredients: oats, nuts, egg white, cinnamon, salt, and vanilla. Divide the granola mixture between 12 greased muffin cavities. Press the mix into each cavity to form a little cup (the sides should be covered and there should be a little dent in the middle). Bake at 350 degree for 15-18 minutes or until golden brown. Let cool and then remove cups from pan. Once completely cool, fill with your favorite yogurt (I used siggi’s vanilla yogurt), berries, a touch of honey, and lemon zest.
The granola cups have the perfect sweet and salty flavor and nice crunchy bite plus is made with a ton of great superfoods, like nuts, chia seeds, oats, coconut oil and egg whites. The egg whites help bind the granola cups together while also adding protein. These are also refined-sugar free and gluten-free.
The crunchy sweet shell pairs beautifully with the creamy cold yogurt and tart sweet berries. I used siggi’s vanilla bean yogurt because it has a nice thick consistency and is not too sweet (I always check the labels on my yogurts to make sure they are not too high in sugar). You can use whatever yogurt you prefer! I also used berries because I just love berries. But any fruit will work here: kiwi, citrus fruits, bananas, pears – whatever you have on hand!

This is a fun new way to eat yogurt and berries. It would be totally great for kids too – and fun to make with them at they can customize the cups and add their favorite fillings. Plus, it’s portable, so becomes a great grab and go breakfast for the week for kids and adults. Everyone in the family will love them!

Granola Cups with Yogurt and Berries
Refined sugar-free & gluten-free granola cups made with oats, chia seeds, and nuts and topped with your favorite yogurt, berries, lemon zest and a touch of honey.
Ingredients
Granola Cups
- 1/4 cup coconut sugar
- 2 tablespoons maple
- 4 tablespoons coconut oil
- 1 1/2 cup old fashioned oats
- 1/4 cup pecans chopped**
- 1/4 cup walnuts chopped
- 1/2 cup almonds chopped
- 1 tablespoon chia seeds
- 1 egg white
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- Salt
Toppings
- 2 cup vanilla yogurt or favorite flavor
- Zest of one lemon
- Berries
- Honey for drizzling
Instructions

Pre-heat the oven to 350 degrees. Grease a 12 cavity muffin pan.

For the cups, melt the coconut oil. Stir in the coconut sugar and maple and mix until sugar is dissolved. Mix in the remaining ingredients.

Divide the granola mixture between the greased muffin cavities. Use a spoon to press the mixture into each muffin cavity, making sure the sides are fully covered and there is a small hole/indent in the middle so it forms a cup.

Bake for 15-18 minutes, or until golden brown. Allow to cools slightly then remove from muffin pan. Allow to cool completely.

Fill each granola cup with yogurt, berries, lemon zest, and honey.

Recipe Notes
You can use any combination of nuts you prefer – just make sure it equals 1 cup.
