The Best Healthier Brownies

They have an intense chocolate flavor and perfect fudgy texture, plus the perfect balance of sweetness.

Ingredients

Brownies

  • 3/4 cup dark chocolate chips I used a dairy free kind
  • 1/4 cup coconut oil
  • 1 cup roasted mashed sweet potato
  • 2 eggs room temp
  • 1/2 cup Whole Earth Baking Blend
  • 1/4 cup cocoa powder
  • 1/4 cup oat flour or whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • One pinch sea salt

Frosting

  • 1 cup roasted mashed sweet potato
  • 1/4 cup cocoa powder
  • 3-4 tablespoons Whole Earth honey or agave
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350 degrees grease a 8x8” baking pan and set aside.
  2. Melt chocolate & coconut oil together in the microwave. Mix until completely melted.
  3. Mix in Whole Earth baking blend sugar, sweet potatoes, and vanilla.

  4. Mix in eggs, one at a time until the batter is completely smooth.
  5. Shift in dry ingredients, whisk until just incorporated.
  6. Pour batter into prepared pan and bake for 20 to 25 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. Less time will yield a gooier brownie (I baked mine for 22 min).
  7. When brownies are finished baking, allow to cool completely and then remove from pan.
  8. To make frosting, whisk together all the ingredients until smooth and creamy. 

  9. Frost the brownies and cut into 9/16 squares.
