I’m so excited to be partnering with my friend’s at Purely Elizabeth to bring you this Fall flavored, healthy granola bar.
Purely Elizabeth is hands down my favorite granola. First off, I love it because it truly tastes amazing. The granola has a great crunchy texture, is perfectly sweetened with coconut sugar, and comes in a variety of interesting and creative flavors, like Maple + Almond Butter. But it’s also made with nutrient-rich superfoods, so you can feel good about eating it!
I introduced my husband to Purely Elizabeth and now he is addicted too! Problem is he may like it too much. . . . I catch him snacking on huge handfuls of it all the time throughout the day. He basically eats the entire bag before I have a chance to eat any!
I had to resort to hiding my precious Purely Elizabeth so he wouldn’t devour it all! I promise you will covet this delicious treat too – it’s gold!
I knew I was being a bit selfish and needed to come up with a compromise for us both to enjoy this delicious granola. And I had an idea of how to accomplish this task. My husband and I both loves granola bars and eat one almost every day. I try to make homemade granola bars or only purchase ones made with wholesome, natural ingredients. I knew Purely Elizabeth Maple + Almond Butter Granola would work perfectly in a Fall inspired homemade no-bake granola bar.
The granola bars are a perfect solution. We both get our Purely Elizabeth fix and we can divide the granola bars equally so no-one feels cheated.
Best yet, the bars taste amazing, really highlighting the crunchy, delicious granola, and are easy to make.
Let’s get to making these Apple Almond Butter Granola Bars!
First step is toasting the oats and pecans. This step is the most work intensive, but I think it’s totally necessary. Toasting the oats and pecans gives both ingredients a nuttier, richer flavor. And it’s really not too time-consuming or difficult – just toast the oats and pecans in a 350 degree oven for about ten minutes, flipping half way through. You just want both to slightly brown. Set aside and let cool slightly.
Next, microwave the almond butter and coconut oil in a microwave safe bowl in increments of 30 seconds until the coconut oil is fully melted and the almond butter is smooth. The almond butter and coconut oil work as a binder to keep the granola bar together – plus the almond butter flavor pairs perfectly with the Maple + Almond Butter granola.
Once the almond butter and coconut oil are both melted, stir in the vanilla and maple syrup. The maple adds a rich sweetness and again works beautifully with the flavors in the granola.
Finally, stir in the remaining ingredients: Purely Elizabeth Maple + Almond Butter Granola, the perfectly toasted oats and pecans, dried apples + cranberries, fall spices, orange zest, and salt.
The dried fruit provides additional sweetness and a chewy contrasting texture. The bars get their apple flavor from the dried apples (make sure to get the dried chewy apples – NOT the freeze dried kind). The fall spices give the bars that warm, familiar fall flavor and the orange zest adds a pop of freshness to help cut through all the richness.
Stir until all of the ingredients are coated in the almond butter mixture. Then press the entire mixture into a parchment paper lined 8×8 baking dish. I used the back of a measuring cup to help evenly press down the ingredients. Let the bars set up in fridge for at least 2 hours.
Just before you take our the granola bars from the fridge, make the almond butter glaze. Microwave the almond butter and coconut oil until both are melted. Add in maple syrup and sea salt. The glaze tastes like salted caramel and is a great sticky sweet addition to these bars.
Cut the bars into 10-12 pieces. Drizzle with the almond butter glaze.
These bars are perfection. They have that sweet and salty flavor combination that you all know I love. Plus, they have a crunchy, delicious bite from the Purely Elizabeth granola, chewy sweetness from the dried fruit, beautiful warm fall flavor from the spices, and toasty goodness from the pecans and oats.
These bars are addictively good. My husband gave me the big thumbs up on the recipe! He asks me to make a new batch each week. However, he does keep eating more than his fair share. I may have to resort to hiding mine again ….. 🙂

Apple Almond Butter Granola Bars
Healthy, sweet and salty, no-bake granola bars made with Purely Elizabeth Maple + Almond Butter Granola, creamy almond butter, dried apples and cranberries, Fall spices, & toasted oats and pecans. Delicious, wholesome Fall snaking at its best!
Ingredients
Bars
- 1 1/2 cup Purely Elizabeth Maple + Almond Butter Granola.
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/2 cup dried apples cut in small chunks
- 1/2 cup dried cranberries
- 1 cup creamy almond butter
- 1/4 cup coconut oil
- 1/4 cup + 2 tablespoons maple syrup
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ginger
- 1 tablespoon orange zest
- Pinch sea salt
Almond Butter Glaze
- 2 tablespoons creamy almond butter
- 1 1/2 tablespoons maple
- 1 teaspoon coconut oil
- Pinch sea salt
Instructions

Pre-heat oven to 350 degrees. Toast oats and pecans for about 10 minutes in the oven so they are slightly browned., stirring half way through. Let cool slightly.

In a microwave safe bowl, microwave almond butter and coconut oil until coconut oil is completely melted and the almond butter is thinned out and smooth. Stir in vanilla and maple syrup.

Add in remaining ingredients. Stir until all the ingredients are well-combined.

Press the mixture into a parchment paper lined 8x8 pan. Allow bars to set up in fridge for at least 4 hours.

Lift parchment paper to remove bars from pan. Cut into 10-12 bars.

For the glaze, combine the coconut oil and almond butter and microwave until the coconut oil is melted (about 30 seconds). Stir in maple syrup and sea salt. Use a spoon or a piping bag to drizzle the glaze over each bar.
