In honor of Toast Tuesday, I’m bringing you a mediterranean inspired avocado toast.
I realized I haven’t shared a new avocado toast recipe in a while, so I needed to change that! You guys know I love avocado toast! Some of my all time favorite recipes on my site are avocado toast recipes. Like this elotes avocado toast. Or this spring avocado toast. So, decided to give this classic dish a new, international spin. I’m taking it to the mediterranean.
It’s a toasted slice of whole wheat bread topped with a creamy, herbed goat cheese, a flavor-packed sun-dried tomato pesto, fresh sliced avocado, salty feta, herbaceous dill, and a squeeze of bright lemon juice. It’s a beautiful harmony of mediterranean flavors.

Now, I know this recipe sounds like it has a lot of components, but it’s actually simple to make. My secret: I cheated a bit and bought pre-made ingredients.
First, I found a good quality homemade fresh loaf of whole wheat bread at our local co-op. The base of avocado toast and one of the main components (besides the avocado, of course) is the bread. So, it’s important to use something fresh and high quality. Try to find a local co-op or local bakery to find fresh bread near you!
Next cheat: I used a store bought herb cream cheese spread. It’s super creamy and perfectly spreadable, plus already pre-seasoned with all these delicious herbs. It’s typically located in the fine cheese section of the grocery store.
I also used a store bought sun-dried tomato pesto, which I found near the sun-dried tomato section in the produce isle. It was super flavorful, hearty, and tasted homemade. You can also make your own, but if you want a quick meal, this is a great short cut.
Finally, instead of mashing the avocado (which makes an extra dirty bowl), I just sliced it into thin slices and topped it on the toast.
For a little something extra, I topped with sharp, salty feta and some fresh dill.
This is gorgeous piece of toast bursting with so much flavor and only takes 5 minutes to make. It’s a masterpiece!

It makes for a great breakfast. Just add an egg for some extra protein.
It also works great as lunch or dinner. You could always add chicken or other protein to make it heartier to keep you full.

Healthy Mediterranean Avocado Toast
- 4 slices whole grain bread toasted
- 4 tablespoons herb cream cheese spread I used Boursin
- 4 tablespoons sun-dried tomato pesto
- 2 avocados cut in half and sliced thinly
- 1 tablespoon fresh dill
- 1/4 cup feta
- half lemon for garnish if desired
Spread 1 tablespoon (more or less if desired) of cream chesse spread on each slice of toast.
Spread 1 tablespoon (more or less if desired) of sun-dried tomato pesto on each slice of toast.
Add one half of each avocado, thinly sliced, on each slice of toast.
Garnish with dill, feta, and fresh squeeze of lemon juice.
Serve and enjoy!
This recipe is very customizable. Use as much or as little of each ingredient on the toast as desired. I like a lot of toppings, so I use a lot!
