Almond Butter Overnight Oats
I love overnight oats. They make for a simple, healthy, and delicious breakfast treat. Plus, you can prepare them beforehand, which makes them perfect for meal prep.
Overnight oats are also very versatile. You can try so many different flavor combinations. Some of my favorite past recipes are carrot cake overnight oats, gingerbread overnight oats, and cinnamon vanilla overnight oats.
Today, I’m bringing you almond butter overnight oat parfaits. They contain delicious creamy almond butter overnight oats, a quick and simple raspberry jam (no cooking involved!), and lots of other fruit toppings. These almond butter overnight oat parfaits are a pretty, delicious, and healthy breakfast treat!

how to make overnight oats
One reason I’m such a fan of overnight oats are they are easy to make and perfect for meal prep.
Here’s how to make them:
- In a large bowl, mix together the milk, almond butter, date syrup, and vanilla and stir until well-mixed and creamy. I do this step first to ensure the almond butter is well-incorporated throughout the overnight oats.
- Next, pour in oats, cinnamon, and salt and mix until all the ingredients are well-combined.
- Place in fridge for the oats to set up (at least 4 hours, preferably overnight). The oats will soak up the almond butter milk mixture and become plump and delicious. It’s very similar to regular cooked oats just cold instead of hot!

how to make the quick raspberry jam
Ok, confession. This really isn’t a jam at all. It’s just mashed macerated raspberries. But it has the same texture of a jam without the hassle of cooking it. Win win!
To make this quick “jam”, add the raspberries, coconut sugar (or regular cane sugar, if preferred), and a little water to a bowl. Allow to sit for 5 minutes. This is called macerating the berries and it allows the berries to soften and release their natural sugars. Next, use a fork to mash the raspberries so they are broken down but still chunky. That’s it! Your quick raspberry jam is complete.

Now it’s time to build these almond butter overnight oat parfaits. Using a short glass, layer the overnight oats, quick raspberry jam, additional fruit, and almond butter until glass is completely filled. Top with more fruit and chia seeds for garnish. Voila! You have a delicious, pretty breakfast treat!

Ingredients
Overnight Oats
- 1 1/2 cups old fashioned oats I used a gluten-free kind
- 1 1/2 cups + 1/4 cup almond milk
- 3 tablespoons almond butter
- 3-4 tablespoons date syrup or maple syrup
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
Quick Raspberry Jam
- 1/2 cup raspberries
- 1 teaspoon water
- 1 teaspoon coconut sugar
Additional toppings
- 3 tablespoons almond butter
- 1 banana sliced
- 1/2 cup blueberries
- 1 tablespoon chia seeds
Instructions

In a large bowl, mix together the milk, almond butter, syrup**, and vanilla and stir until well-mixed and creamy.

Pour in oats, cinnamon, and salt and milk until all the ingredients are well-combined. Place in fridge for the oats to set up (at least 4 hours, preferably overnight).

For the quick raspberry jam, combine raspberries, coconut sugar, and water in a bowl and allow to sit for 5 minutes so the raspberries release their juices. Use a fork to mash the raspberries until they are broken down but still chunky.

To build the parfaits, layer the overnight oats, raspberry jam, almond butter, and other fruit until the glass is filled. Top with chia seeds if desired. Continue until all the ingredients are used (3-4 parfaits).

Recipe Notes
First add 3 tablespoons of syrup and taste. If you want it sweeter, add one more tablespoon
These store for 4-5 days in an airtight container in the fridge.
