I’m so excited to bring you the first ever boozy popsicles on Danilicious: my berry gin gimlet popsicles! They are berry and boozy – the perfect summer combo!
With summer sunshine in full force this time of year, these boozy gin popsicles are the perfect way to cool down. Plus, these sweet and boozy gin popsicles scream summer. They are made with a homemade refined sugar free limeade, ripe, fresh summer berries, and handcrafted and flavorful Empress 1908 Gin.
These popsicles are an ode to the classic gin gimlet. A gin gimlet is traditionally made with lime juice, simple syrup, and gin. It was created in the 1920s and is still immensely popular today because it allows the gin to shine while also adding enough sweetness that makes it approachable for all. I brought berries the party to bring in the summer vibes. The berries also add a beautiful hue and natural sweetness that pairs perfectly with the other flavors in the gimlet and makes these popsicles magic.

Empress 1908 Gin
Empress 1908 Gin is a hand-crafted spirit from Victoria Distillers in British Columbia, Canada. It was inspired by the renowned tea and cocktail programs of the iconic Fairmont Empress Hotel in Victoria.

More, on it’s flavor and noticeable hue. Empress 1908 Gin is micro-distilled in small batch copper-pot stills using eight botanicals: juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms and the Fairmont Empress Blend Tea. The result is a delicious, floral gin that pairs perfectly with flavors like berries and lime. It also worked great in my grapefruit and rose gin fizz!
The butterfly pea blossom imparts subtle earthy notes and an all-natural indigo hue with a stunning secret to reveal: with the addition of citrus or tonic, Empress 1908 transforms from vivid indigo blue to a delicate soft pink.

I’m a huge fan of their gin! It’s got a unique color and hue that makes it superior to other gins I’ve tried. Plus, their motto is “live colorfully” which is something I strive for and LOVE!

How to make these Berry Gin Gimlet Popsicles
These popsicles are incredible easy to make!
Homemade Refined Sugar Free Limeade
Ir starts with my homemade limeade that is sweetened with only agave so refined sugar free (unlike store bought kinds that are chalked full of sugar).
Simply combine 1/3 cup fresh lime juice (you can buy the fresh lime juice already squeezed as a short cut), 1/2 cup water, and 4 tablespoons of agave. Stir it all together and take a sip. If you prefer it a little sweeter, add in a touch more agave. Limemade is a perfect combo of sweet and tart that works perfectly in these berry gin gimlet popsicles.
The Berries
I also used fresh, ripe summer berries, blueberries, blackberries, and raspberries. They add a sweet tartness that works well with the lime and Empress 1908 Gin. Also, berries and summer go hand and hand!
Blend
Finally, add the limeade, berries, gin, and a little stevia to the blender and blend until smooth. You can strain the mixture to remove the seeds and pulp if preferred (I did not because I liked the texture, and to be honest, was too impatient to add in this step!).
Pour the popsicles into silicon popsicle molds. I used these ones and they worked great! I added extra berries to the popsicles molds for a fun surprise while eating these pops!
Allow to freeze for at 4 hours or until completely frozen and set. Remove from the molds and devour!

Berry Gin Gimlet Popsicles
Ingredients
Homemade Limeade
- 1/3 cup lime juice
- 1/2 cup water
- 4 tablespoons agave + 1-2 tablespoons more if desired
Berry Gin Ginlet Popcicles
- 1 cup blueberries
- 2/3 cup blackberries
- 2/3 cup raspberries
- 1/3-1/2 cup gin depending on how boozy you prefer it
- 3/4 cup limemade
- Pinch salt
- 1 teaspoon plant-based stevia sweetener
- 3/4 cup fresh mixed berries for topping
Instructions

For the limeade, in a pitcher, combine the lime juice, water, and agave and mix until well-combined. Taste and adjust to your desired sweetness (can add more agave if needed).

For the popsicles, add berries, limeade, gin, pinch salt, and stevia and blend until smooth. Strain the mixture if desired.

Pour the mixture into 6-8 silicon popcile molds. Divide the extra fruit between the filled popsicle molds. Place in freezer to set, for at least 4 hours.

Remove the popsicles from the molds.
