This paleo, dairy-free, and vegan creamer is made with coconut milk, almond milk, dates, cinnamon, and a touch of maple syrup. A delicious guilt free way to spice up your morning coffee.
I’m a huge coffee lover. I can’t start my day without a good, strong cup of Joe. I take…but first coffee…very literally.
One of my absolute favorites is Chameleon Cold Brew. They experimented for months to create the perfect cup of coffee. And that they did! It’s rich and robust (and I like my coffee pretty strong) but drinks super smooth (so is perfect for any coffee fan). They also have a variety of flavors, including black, pecan, vanilla, and mocha.
I also love that their coffee concentrate is customizable.
As I mentioned earlier, I prefer very, very strong coffee. My dad jokes that when I make the coffee, “It’ll put hair on your chest.”
When I stay the night, my parents (and now even my in-laws) purposely try to wake up before me so they can prevent me from making the coffee. And I’m an early riser. When I smell the sweet aroma of freshly brewed coffee, I know they’ve beat me to the coffee machine.
It’s not that they don’t make a good cup of coffee….it’s just a little weak for my palette.
A great solution is Chamelon’s cold brew concentrate. When I pour a glass, I just add a touch of creamer. I really want to taste the rich, bold flavor of the coffee with just a hint of extra spice and sweetness.
But if you prefer a little less power to your coffee (and you don’t want to find any unwanted chest hairs 🙂 ), you can add more milk, water, or creamer.

My homemade paleo caramel cinnamon coffee creamer.

The creamer is made with coconut milk, almond milk, cinnamon, dates, vanilla, and a touch of maple syrup.
Coconut milk has a rich, creamy texture that works beautifully in coffee and mimics the consistency of store bought creamers. It also gives the creamer just a subtle hint of coconut flavor.
I also add a little bit of almond/cashew milk to slightly lighten up the rich coconut milk.
To give it a nice caramel flavor, I used dates. Dates are a wonderful gift from nature. They are all natural and full of vitamins and minerals, but taste like a caramel candy. I love using dates to make caramel or sweeten dishes.
To provide a little extra sweetness, I also added vanilla and dash of maple (also natural sweetners).
The final ingredient is cinnamon. It provides a hint of spice that helps bring out the subtle spices in the coffee and also tames the sweetness from the other ingredients. Plus, there is something about a burst of cinnamon in my coffee the helps wake up all my senses in the morning!
To make the creamer, blend together all of the ingredients in a high powered blender. Then strain the mixture with a sieve to get rid of any residue from the dates and ensure you have a smooth, luscious creamer.
Now go ahead and pour some in your glass of Chameleon cold brew!
Or pour it into a glass of warmed coffee. Like I said, the Chameleon cold brew is totally customizable.
The creamer has wonderful notes of caramel and cinnamon the pairs perfectly with the bold flavor of the cold brew. It’s also perfectly sweet so does not hide or overpower the bold coffee taste (and you know I don’t want that!)

Paleo Caramel Cinnamon Creamer
A delicious guilt free way to spice up your morning coffee.
Ingredients
- 1 can coconut milk I used light
- 1/2 cup almond or cashew milk
- 2 dates
- 1 teaspoon maple syrup optional
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup Chameleon Cold Brew
Instructions

In a blender, combine all of the ingredients and blend until smooth.

Strain the mixture with a sieve to get rid of any date pieces.

Pour into an airtight container.

Pour desired amount of cold brew into a glass of ice. Add desired amount of creamer. Enjoy!
