A delicious, tender earl grey coffee cake muffin loaded with cinnamon chips and blueberries, and topped with a cinnamon brown sugar walnut streusel. Also, for a finishing touch, these muffins are topped with honey (because honey loves tea!) and butter (because butter makes everything better!).

Earl Grey Blueberry Coffee Cake Muffins
I’m teaming up with my friends at the Tea Council of the U.S.A to bring you this new tea inspired recipe.
Tea is good for more than just drinking (although a cozy cup of tea is perfect for the winter too!). Tea is also great in baked goods. It has a earthy, rich, slightly fruity flavor that enhances the flavor of baked treats.
Earl grey is personally one of my favorite teas, so I decided to add it to a coffee cake style muffin. Think coffee cake, with tons of buttery streusel and rich cinnamon flavor, in jumbo muffin form. Yaas! Plus, rich earl grey tea flavor and tons of cinnamon chips and blueberries. These muffins are extra special and delicious!
Also, my husband, who claims to be a non-tea lover, can’t get enough of these muffins. He’s been eating them for breakfast and even dessert. So, this muffin will please everyone and maybe even convert your friends into tea lovers too!

What is earl grey tea?
All true teas – black, white, green, oolong and dark – come from the Camellia sinensis plant, a warm-weather evergreen.
Earl grey tea is a black tea infused with the essence of bergamot, an intensely floral orange grown in Italy. It has wonderful citrusy notes combined with the bold, malty flavor of black tea.
It’s malty, citrusy notes adds another depth of flavor to these muffins. Earl grey tea also pairs beautifully with cinnamon and blueberries, making this a well-balanced, addictively delicious muffin!

*So, it’s definitely worth sipping on some earl grey black tea this winter season and adding it to your baked treats!

Main Ingredients
For muffins,
- Earl grey tea
- almond milk (you steep the earl grey tea with the almond milk, which adds the tea flavor to the muffins)
- greek yogurt (the combo of unsweetened almond milk and greek yogurt gives the muffins a moist light texture without too much fat)
- whole wheat pastry flour (my go-to healthier flour – it has a lighter texture than regular whole wheat flour so provides a less dense finished product)
- cinnamon
- walnut oil
- cinnamon chips (these add little pops of cinnamon flavor = magic!)
- blueberries (because blueberries and earl grey tea are meant to be besties!)
For Streusel,
- butter
- whole wheat pastry flour
- cinnamon
- walnuts (walnuts add a great nutty flavor and crunch!)

How to serve the muffins?
These muffins are best served warm (if you are eating them later, you can pop them in the microwave for 15-30 seconds) and topped with butter and honey.
Honey is a match made in heaven with tea. And, let’s be honest, butter makes everything better! Amiright?!?

Earl Grey Blueberry Coffee Cake Muffins
A delicious, tender jumb whole wheat muffin flavored with cinnamon and earl grey tea, loaded with cinnamon chips and blueberries, and topped with a cinnamon brown sugar streusel.
Ingredients
Muffins
- 1 ½ cups whole wheat pastry flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ cup brown sugar or coconut sugar
- ¾ cup milk I used unsweetened vanilla almond milk
- 6 earl grey tea bags
- 1/3 cup walnut oil or neutral oil of choice
- 2 eggs room temp.
- 2 tablespoons full fat Greek yogurt room temp.
- 1 teaspoon vanilla
- ½ cup blueberries
- ½ cup cinnamon chips optional but highly recommended
- Honey and butter for topping
Streusel
- 5 tablespoons cold butter cubed
- 1/3 cup whole wheat pastry flour
- 1/3 cup brown sugar
- ¼ cup chopped walnuts
- ¼ teaspoon salt
- ½ teaspoon cinnamon
Instructions

Pre-heat the oven to 350 degrees. Line a muffin pan with 6-9 jumbo muffin holders (or 12-15 regular sized muffin holders).

Microwave milk for 2 minutes. Steep tea bags for 5-10 minutes. Allow to cool.

To make the streusel, combine all of the ingredients and use a fork or your hands and mix until it creates a crumble like mixture.

In a large bowl, mix together all of the dry ingredients (whole wheat flour to cinnamon)

In a separate bowl, whisk together brown sugar and eggs, until sugar is dissolved. Mix in Greek yogurt, walnut oil, tea flavored milk, and vanilla until smooth.

Combine the wet and dry ingredients and mix until well-incorporated. Fold in cinnamon chips and blueberries.

Divide batter between muffin holders. Top with generous amount of streusel.

Bake for 22-25 minutes (16-18 if smaller muffins).

Allow to cool. Top with mutter and honey.
