A delicious blend of black tea with warming chai spices and sweet pumpkin pie flavors come together to create a dessert like but healthy breakfast treat!

Black chai tea is one of my favorite winter-time drinks. It’s cozy and comforting with all of it’s delicious warming spices. But it’s not just perfect for sipping on….you can also use this tea in unexpected ways!
I love infusing the black tea bags with the chai spices into milk so I can add that beautiful, rich, warming flavor to other treats.
For instance, I few weeks back I created my chai spice whole wheat banana waffles. Fluffy, golden brown whole wheat waffles packed with warm chai spices and big banana flavor. It’s the perfect, easy to make, cozy winter breakfast!
My latest creation using black tea with chai spices is my chai tea pumpkin pie overnight oats! Pumpkin and chai tea flavors are a match made in heaven. The warm bold flavor in the black chai tea pair beautifully with the earthy sweet flavor of the pumpkin.
It’s a delicious, flavorful, tea-forward, healthy breakfast!
Let’s get to cooking!
The first step in making this breakfast treat is infusing the black chai tea into the almond milk(or milk to choice). To do so, add the almond milk, 2 cinnamon sticks, and 2 star anise pods to a sauce pan and bring to a simmer. Allow the mixture to simmer for about 5-10 minutes to it gets HOT. You want the milk to get hot so the tea bags will steep and the whole spices impart their flavor into the milk. Once the mixture is hot, remove from the heat and add in 6 black chai tea bags and steep for 10 minutes. Remove from heat and allow mixture to cool to about room temperature.
I love using black chai tea in this recipe because of its bold flavor. Chai tea is a robust blend of spices, like ginger, cardamom, cloves, star anise and cinnamon, and, of course, black tea.
Also, did you know that black tea is the most commonly consumed tea in the world accounting for approximately 68% of all consumption? In the United States well over 80% of the tea consumed is black!
Combined with the chai spices, it’s magic and the perfect pick-me-up in the morning!
Next, add the milk, pumpkin puree, spices, and salt to a large bowl and whisk until well-combined. Stir in the oats so the oats are well mixed in with the pumpkin mixture. Put the oats in the fridge and allow them to set up overnight. The oats well absorb the black tea chai pumpkin milk mixture and become plump and delicious!
The next morning, you can remove the oats from the fridge. If they seem too thick, just add a little milk to help thin them out a bit.
To assemble the parfaits, first add your favorite granola to the bottom of a wreck or mason jar. The granola acts like the crust of the pumpkin pie. Spoon the overnight oats on top, which makes up the filling. Like with any good pumpkin pie, you must garnish with a dollop of whipped cream….and a dash of cinnamon and a couple of pecans for good measure.
This is the perfect dessert for breakfast scenario….delicious and healthy! These overnight oats are luscious and sweet like pumpkin pie & full of warming spices and a little morning boost from the black chai tea but also filled with protein and fiber from the oats, pumpkin puree, and almond milk.
And let’s not forget the health benefits of black tea! Black tea may improve cardiovascular health, has been shown to reduce blood pressure, and has flavonoids that have been shown to boost the immune system. Delicious and helps you stay healthy. A win win!

Chai Tea Pumpkin Pie Overnight Oats
A delicious blend of warming chai tea spices and sweet pumpkin pie flavors come together to create a healthy but dessert like breakfast treat!
Ingredients
- 2 cups milk of choice I used almond milk
- 6 black chai tea bags
- 2 cinnamon sticks
- 2 star anise pods
- 1 3/4 cups old fashioned oats
- 1/2 cup pumpkin puree
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- Pinch salt
- 1 cup your favorite granola
Instructions

In a sauce pan, combine the milk, cinnamon sticks, and star anise pods and bring to a simmer. You want the mixture to become very hot but not fully boiling. Remove from heat and add tea bags and allow the tea bags to seep for at least 10 minutes. Strain milk and allow to cool.

In a large bowl, whisk together the chai infused milk, pumpkin, spices, and salt. Add in the oats and stir until well-combined. Allow the oat mixture to set up in fridge overnight.**

(The oats set overnight by absorbing the chai pumpkin mixture, which allows them to become plump and softer).

Take a small mason or wreck jar and add 1/4 cup granola to the bottom. Add a large scoop of the overnight oats. Top with whipped cream and pecans. Repeat until all of the oat mixture is used - it should make about 4 parfaits.

Recipe Notes
If the oats seem too thick in the morning, you can simply add a splash more milk to help thin them out.
