Christmas is only 3 days away! I can hardly wait!
One of my favorite parts of Christmas Day is our Christmas Day brunch.
After my whole family opens their gifts, we head to the kitchen to work together to create a delicious meal.
First, we pour mimosas and bloody Mary’s to start the Christmas Day celebrations. Of course! Then we start working on the elaborate meal. We usually make a savory dish, like biscuits and gravy or Eggs Benedict, some of the family’s favorite.
We also make a sweet dish, like warm, gooey cinnamon rolls or some sort of baked treat.
This year I have a surprise for my family! I already took care of the sweet part of our breakfast meal! I created an apple walnut coffee cake with honey ginger glaze. It’s a super moist cake, filled with honey crisp apples and warming spices, topped with a crunchy walnut cinnamon streusel, and drizzled with a sweet and slightly spicy honey ginger glaze. It’s going to be a magical bunch treat!

Now, I know what you may be thinking….this sounds amazing but way too complicated to whip up with Christmas only 3 days away. But this coffee cake is actually super easy to make because I used Foodstirs apple spice organic baking mix and doctored it up with some fresh apples, crunchy walnuts, and my own glaze. So this recipe is easy peasy!

Let’s get to baking!
The first step is making the batter according to package instructions – so whisk together the cake mix, melted butter, greek yogurt, and vanilla unsweetened almond milk (or milk of choice).
One thing that I love about Foodstirs is that it has you utilize healthier ingredients, like greek yogurt, to make the dessert, which helps keep it lighter but still moist and flavorful.
To doctor up the recipe, I fold a cup of diced honey crisp apples coated in cinnamon and allspice into the batter. This helps intensify the apple flavor while also adding some texture to the cake.
Next, you will make the streusel topping. I added walnuts to the recipe to give it a nice crunch. Plus, apples and walnuts paper beautifully together so helps make this cake shine!
Mix together 1/3 cup crushed walnuts and cinnamon with the pouch of streusel topping that comes with the baking mix. Add in 1 1/2 tablespoons softened butter and mix with a fork until you have a wet crumbly mixture.

Pour the cake batter into a greased 8×8 cake pan. Top with the streusel topping. Bake for 45-50 minutes, or until a toothpick comes out clean.
The final step is creating the glaze. Simply, whisk together 1 tablespoon honey, 1/4-1/2 teaspoon ground ginger (add it to taste), 2/3 cups powdered sugar, pinch salt, and 1 tablespoon unsweetened vanilla almond milk. Make sure to whisk it until you have no more lumps. Drizzle all over the cooled cake.
Time to serve and enjoy!
Yep….that is all it took to create a Christmas brunch masterpiece.

Be prepared to be addicted to this cake! You will be shocked that it’s made with a box mix because it taste completely homemade! It’s light and fluffy, packed with big apple and cinnamon flavor, a little crunchy and nutty from the streusel topping, and gooey and delicious from the honey ginger glaze. It’s sweet brunch perfection!

Not only is this cake easy to make, but it can also be made beforehand, so you can spend more time relaxing and drinking mimosas, and spend less time in the kitchen Christmas morning.

Apple Walnut Coffee Cake with Honey Ginger Glaze
Ingredients
Cake
- 1 box Foodstirs organic warm apple spice cake mix
- 1/3 cup almond milk
- 1/3 cup greek yogurt
- 1/2 cup melted butter
- 1 honey crisp apple diced
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
Streusel Topping
- 1/3 cup crushed walnuts
- 1 1/2 tablespoons softened butter
- 1/2 teaspoon cinnamon
- pouch streusel topping that came with baking mix
Glaze
- 2/3 cup powdered sugar
- 1 tablespoon honey
- 1 tablespoon almond milk
- Pinch ground ginger
- Pinch of salt
Instructions

Pre-heat oven to 350 degrees. Grease a 8×8 pan. I also recommended lining it with parchment paper for easier removal.

Make cake according to package instructions. Mix the apples with 1/2 teaspoon cinnamon and 1/4 teaspoon allspice. Fold in the diced apples to the batter. Pour cake batter into the greased baking dish.

For streusel topping, combine the streusel topping contained in box, 1/3 cup crushed walnuts, 1/2 teaspoon cinnamon, and 1 1/2 tablespoons softened butter until you have a crumbly mixture. Pour streusel topping on top of the cake.

Bake for 45-50 minutes (the addition of apples increases the baking time on the box slightly).

Once baked, remove from oven and allow to cool completely before removing from pan.

To make the glaze, combine all the glaze ingredients and stir until smooth. Drizzle over cake.
