Aperol spritz has become a widely popular cocktail. And for good reason! It’s light and citrusy, not overly sweet, and super refreshing. Plus, a little bubbly is involved. In recently earned the nickname “drink of summer” and for good reason. It’s the perfect summer cocktail because it’s crisp, citrusy, and light.
I had my first Aperol spritz with some good friends at a trendy restaurant in the west loop Chicago last summer. We were outside on the patio at the very peek of the summer, and after one sip of this cool, crisp cocktail, I was instantly hooked!
These friends recently came to visit us at our new home and brought a bottle of aperol as a sweet, nostalgic housewarming gift. I knew I needed to put it to good use and put a winter spin on this classic Italian beverage.
Pomegranate is a quintessential holiday and winter flavor so pomegranate juice is the perfect addition to this cocktail. It’s tart and a little sweet so it pairs well with the bitter, citrusy aperol. It’s also this gorgeous ruby red color, which makes it the perfect festive holiday drink!

What is Aperol?
Aperol is a classic Italian bitter aperitif and the main ingredient in an aperol spritz. The key ingredients include bitter and sweet oranges, rhubarb, and many different herbs and spices. It’s a super citrusy, little bitter, and totally unique taste that pairs perfectly with some bubbles!

- Club Soda
- Pomegranate Juice
- Rosemary and Pomegranate seeds for garnish

How to make this cocktail?
This cocktail looks super fancy and sophisticated, but it’s actually very simple to make.
My recipe for the pomegranate aperol spritz is as easy as 1, 2, 3 – you need one ounce pomegranate juice, 2 ounces aperol, and 3 (to 4) ounces of champagne. Then just a splash of club soda for good measure.
I also add a sprig of rosemary, an orange slice, and a few pomegranate seeds to make it pretty and festive.
This is the perfect cocktail for your holiday party or get together. It’s a total crowd pleaser and is quick to whip up, but your guests will be super impressed and think you’re classy AF!

Pomegranate Aperol Spritz
This pomegranate aperol spritz is the perfect, festive holiday cocktail. It's tart, fruity, light, and refreshing, plus simple and quick to make.
Ingredients
- 1 ounce pomegranate juice about 2 tablespoons
- 2 ounces aperol about 4 tablespoons
- 3-4 ounces champagne about half a cup
- splash of club soda
- rosemary sprigs, orange slice, and pomegranate seeds for garnish
Instructions

Fill a wine glass with ice.

Add the aperol and pomegranate juice to the bottom. Top with champagne. Finish with club soda.

Stir so all the inrgedients are well-incporated
