How to Make This Cheesy Beef Enchilada Skillet
Char the Veggies: Heat a large skillet over medium heat with avocado oil. Add onion, peppers, and corn and cook until the onions are translucent and the other veggies tender.
Brown the Beef: Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease if needed.
Season It Up: Add the taco seasoning and black beans. Stir well to coat everything in those bold spices.
Sauce It: Pour in the enchilada sauce and salsa. Stir to combine and let simmer for 3–5 minutes so the flavors can meld together.
Add the Tortillas: Stir in the tortilla squares, making sure they’re evenly coated in sauce. They’ll soften and soak up all that flavor while cooking.
Make It Cheesy: Sprinkle the shredded sharp cheddar evenly over the top. The more the better so it is extra cheesy!
Bake: Bake at 400 degrees for 9-12 minutes, or until the cheese is fully melted and slightly bubbly. Allow to cool slightly and enjoy this extra cheesy beef enchilada skillet!
