Cheesy Beef Enchilada Skillet

Ingredients

  • 1 pound ground beef
  • 3-4 mini red peppers diced
  • ½ onion diced
  • 1 cup charred frozen corn thawed slightly
  • 1 cup black beans drained and rinsed
  • 1 packet taco seasoning I used Siete
  • 1 15 oz jar red enchilada sauce, I used Siete
  • 1 cup your fav salsa
  • 3-4 whole wheat tortillas cut into squares (you can use 4-5 corn tortillas instead)
  • 2 cups sharp shredded cheddar cheese

Toppings

  • Grek yogurt
  • Fresh thinly sliced jalapeños
  • Avocado sliced
  • Fresh cilantro chopped

Instructions

  1. Heat a large skillet over medium heat with avocado oil. Add onion, peppers, and corn and cook until the onions are translucent and the other veggies tender.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease if needed.
  3. Add the taco seasoning and black beans. Stir well to coat everything in those bold spices.
  4. Pour in the enchilada sauce and salsa. Stir to combine and let simmer for 3–5 minutes so the flavors can meld together. Remove from heat and taste and adjust seasonings to your liking.

  5. Stir in the tortilla squares, making sure they’re evenly coated in sauce. They’ll soften and soak up all that flavor while cooking.
  6. Sprinkle the shredded sharp cheddar evenly over the top. The more the better so it is extra cheesy!
  7. Bake at 400 degrees for 9-12 minutes, or until the cheese is fully melted and slightly bubbly. Allow to cool slightly and enjoy!
