Cheesy Asparagus Puff Pastry Bites
Easter is this weekend and I am so excited! Easter has always been one of my favorite holidays. It’s always near my birthday and right around when the weather starts to warm up. This weekend, it’s supposed to be over 70 degrees, clear skies, and sunny!
This year, Easter feels especially special. Due to Covid, we were unable to spend Thanksgiving or Christmas with my family, which was heartbreaking his year. But now, with so many people getting their vaccines (like my mom and dad), it’s the first Holiday in a long time where we can safely get together and see family and friends. It feels we are turning a corner and getting closer to normalcy! Yay!
So, I’m celebrating with this delicious new appetizer. My cheesy asparagus puff pastry bites. They feature golden brown puff pastry topped with seasoned asparagus, gooey goat cheese + gruyere, crispy prosciutto, and fresh lemon zest. They are gooey from the cheesy, crunchy and flaky from the puff pastry, earthy and green from the asparagus, and salty and delicious from the prosciutto. It’s a magical bite fitting for Spring/Easter celebrations!

Ingredients
These feature some beautiful Spring produce and other goodies:
- fresh asparagus, I love asparagus. It’s fresh in Spring and so delicious when it’s baked and the top stalks get super crispy. I like to cut the asparagus just a little longer than the puff pastry so they fit nicely in the bundle. I also season them with olive oil, S&P, and lemon juice to impart flavor and ensure it bakes beautifully in the bundles.
- goat cheese, it adds creamy, tangy goodness that pairs beautifully with the other flavors.
- gruyere cheese, sharp, nutty gruyere and mild, earthy asparagus are besties and work so well together! It also provides a layer of gooey cheesiness, which makes the app super delicious!
- puff pastry, one of my fav ingredients for a good appetizer. It’s incredibly easy and versatile to use, plus puffs up into golden brown pillows of perfection, making any appetizer irresistible.
- prosciutto, also pairs so well with asparagus and add a salty, umami bite.
- lemon zest, adds a pop of freshness to help cut through all the rich ingredients.
- honey, adds a touch of floral sweetness that plays nice with the goat cheese and helps round out the savory flavors.


How to make these bites
These cheesy asparagus puff pastry bites are easy to make:
- Heat oven to 425 degrees, and line one large baking sheet with parchment paper or spray with cooking spray.
- In a large bowl, toss asparagus stalks with olive oil, salt, pepper and lemon juice. Set aside.
- Unroll puff pastry and flatten into a 9-by-14-inch rectangle. Cut it into 9 squares.
- Spread a smear of goat cheese on each square. Top each square with a slice of prosciutto, 4 seasoned asparagus stalks, and a mound of gruyere cheese, going diagonally down the square.
- Lift two opposite corners of the puff pastry squares and wrap them around the asparagus and press to seal. Brush puff pastry with egg wash. Place in fridge for 25-30 minutes (very important so the puff pastry rises probably).
- Remove the bites from the fridge and immediately put into the pre-heated oven. Bake for 20-25 minutes, or until golden brown and flaky.
- Allow to cool slightly. Top with olive oil, flaky sea salt, and honey.
- Serve and enjoy!

- 1 sheet puff pastry thawed but still cold, if too warm, it will be hard to work with
- 1 bundle asparagus ends trimmed (about 36 stalks)
- ½ tablespoon olive oil
- ¼ teaspoon salt
- Pepper to taste
- Squeeze lemon juice
- 4 oz herb goat cheese
- 1 cup grated gruyere cheese
- 9 slices of prosciutto
- 1 tablespoon lemon zest
- 1 beaten egg
- Olive oil and flaky sea salt for topping, optional
- 1 tablespoon honey optional
