A 4-ingredient super healthy and fresh salad drizzled with a bright, tangy lemon dressing. Perfect for a side dish or add chicken/shrimp to make it a complete meal!

Brussel sprouts are one of my all-time favorite veggies. I buy them almost every week to serve them as a side, add them to stir-fries, or use them in a salad.
I actually never had them growing up (luckily, my mom never boiled them and served them to us when we were young, which I have heard was a common and not very appetizing way to prepare them back in the day!)

The first time I discovered Brussel sprouts was at my first Thanksgiving with my husband’s family. His aunt Christy makes them every year and they are magic. She roasts them with pancetta until they are super charred and crispy and drizzles them with a thick, sweet balsamic glaze. It was love at first bite! They are always hands-down my favorite turkey day side dish!
Now I eat Brussel sprouts on the regular. My usual preparation is just the way Christy did it – charred in the oven with the balsamic glaze. Classic and delicious.
But I have discovered there are a lot of ways to use Brussel sprouts. They are amazing just raw and used as a base of salad. Because of their heartier texture, they hold up nicely to dressing, so the salad doesn’t become soggy. They also pair well with a multitude of flavors, so you can mix it up and be creative with your salad pairings.
I created a 4-ingredient shaved Brussel sprout salad with a lemon dijon dressing. It’s simple and not fussy but super addicting! And it allows the Brussel sprouts to shine and show off their versatility!

Let’s get to preparing this salad!
The first step is preparing the Brussel sprouts. To shave them, I recommend using the slice function on your food processor. It make it super easy and quick to shave multiple Brussel sprouts at once. I use this food processor and it works like a dream. If you do not have a food processor, you can also use a knife and just thinly cut them.
Add the shaved Brussel sprouts to a bowl and top with the pomegranate seeds, shaved parmesan, and shaved almonds.

Next, to make the dressing, combine the lemon juice, honey, fresh garlic, and dijon mustard, and whisk until it so smooth and well-combined. Then, slowing drizzle in the olive oil while continuing to whisk until all the oil is used. The dressing is bright and tangy with just the right amount of sweetness from the honey. It’s the perfect accompaniment to the salad.
Drizzle the dressing on the salad and toss until well combined!

I love that this salad because it is so simple but still packed with so much flavor. The shaved Brussel sprouts give it a nice crunch, the parmesan cheese provides a sharp, salty bite, the pomegranate seeds give it a pop of juicy, sweetness, and the almonds provide texture and nutty flavor. The bright, acidic, slightly sweet lemon dressing makes the whole dish pop and marries all the flavors together.
Simplicity as its best!
This salad works great as a side dish or pair it with chicken or fish and you have a complete meal. Annnddd if you are really feeling wild, you can add a little bacon too! Because let’s face it, bacon and Brussels just got well together. Either way, you will love this salad!


Simple Brussel Sprout Salad with Lemon Dijon Vinaigrette
Ingredients
Brussel Sprout Salad
- 2 cup shaved raw Brussel sprouts
- 1/3 cup pomegranate seeds
- 1/3 cup shaved parmesan
- 1/3 cup shaved almonds
- Desired amount of dressing
Lemon Dijon Vinaigrette
- 2 tablespoons fresh lemon juice
- 2 teaspoons Dijon
- 2 teaspoons honey
- 4 tablespoons olive oil
- 1 teaspoon fresh garlic
- Salt and pepper to taste
Instructions

Add the shaved Brussel sprouts to a salad bowl. Top with pomegranates, parmesan cheese, and almonds.

To male dressing, whisk together all of the dressing ingredients, besides olive oil, until smooth and well-combined. Slowly drizzle in olive oil while continuing until all the oil is used.

Drizzle desired amount of dressing on salad and toss until it is will coated.
