First, let’s talk about breakfast…..
It’s the most important meal of the day. It jump starts your metabolism and helps keep you fueled for the rest of the day.

Breakfast is my absolute favorite meal of the day. I am always trying to create delicious, flavor-packed meals for breakfast. And I like sort of a fancy breakfast, like pancakes, scrambled eggs, smoothies, or a good ole bowl of oats. Who wants to start their day with a boring meal?
I also like to sit down and actually enjoy my breakfast, instead of grabbing some toast or a bar and rushing out the door. I will literally wake up 15-30 minutes earlier, if needed, so I can sit down to eat my breakfast and watch the news. It’s a ritual that helps get me ready for the day ahead.
So a yummy breakfast is a must!
I created a new breakfast treat that I definitely have playing on repeat. It’s that good!
Think creamy oats made with luscious, rich coconut milk and flavored with warm chai spices. Then topped with sweet caramelized bananas dusted with sea salt. It’s a magical combination of sweetness and spices with a hint a salt from the bananas that makes the dish POP!
Good news: it seems fancy and elaborate, but it’s actually very simple to make. Better yet, you can make it ahead, so if you do prefer to take your breakfast on the go, you have that option.
Let’s get to cooking.
First, we will caramelize the bananas. In a small skillet, heat about a tablespoon of coconut oil over medium heat. While the oil heats up, slice a whole banana to create as many 1/2 inch slices you can yield from the banana. Add the banana slices to the heated coconut oil and allow to cook for about 3 minutes per side. Once both sides are caramelized, remove from pan and sprinkle with sea salt.
I know the salt at the end may seem strange, but don’t skip this step. Salt is actually important in sweet dishes. It helps bring out the sweetness of the bananas. It also gives the caramelized bananas a sea salted caramel like taste that is heavenly!
Next, in a sauce pan, add coconut milk (I used Califia toasted coconut milk – it truly is my favorite, as it is sugar free and has a wonderfully creamy, rich texture), chai spices (I used my chai spice blend here, but you can also buy it at most stores or on amazon), another dash of cinnamon (totally optional, but I love cinnamon so added a little more), and a dash of sea salt.
Bring the mixture to a boil. Next, add in oats and simmer for about 5 minutes or until the oats plump up and absorb some of the milk, so you have a porridge like consistency.
Divide the oats between 3-4 bowls and top with caramelized bananas.
That’s it. You have a delicious, unique, and flavor-packed breakfast ready in under 10 minutes. Yaas!
This is a great dish to meal prep ahead of time too. You can store the cooked oats and bananas in the fridge in an airtight container and have on hand for breakfast all week. They eat wonderfully cold (or you can heat them up in the microwave).

Coconut Chai Spice Oatmeal with Caramelized Bananas
Creamy oats made with a delicious blend of chai spices and rich coconut milk and topped with sea salted caramelized bananas. This simply but elegant dish will take your breakfast to the next level!
Ingredients
- 1 banana sliced
- 1 tablespoon coconut oil
- dash of seal salt
- 1 cup old fashioned oats
- 1 3/4 cups coconut milk or non-dairy/diary milk of choice
- dash sea salt
- 1 teaspoon chai spice blend
- extra dash of cinnamon optional
- 2-3 teaspoons of honey or maple syrup any sweetener of choice works
- granola for topping
- coconut flakes for topping
Instructions

In a skillet, heat the coconut oil. Add in sliced bananas. Let cook for 2-3 minutes a side, or until caramelized on both sides. Once cooked, remove from pan and sprinkle with salt.

In a sauce pan, add milk, spices, stir till incorporated, and bring to a boil. Add in oats and let simmer for about 5 minutes or until fully cooked.

Add in 2-3 teaspoons of honey or maple syrup - taste and adjust sweeter as needed

Divide oatmeal between 2-3 bowls. Top with caramelized bananas, granola, and coconut flakes.

Recipe Notes
You can make the oatmeal and bananas ahead of time and store in fridge. You can serve this cold as well - still taste amazing!
