Peanut Butter Banana Chip Granola

Ingredients

  • 1/2 cup O Organics® Old Fashioned Creamy Peanut Butter
  • 1/3 cup O Organics® Maple Syrup
  • 1/4 cup coconut oil solid form
  • 2 1/4 cup rolled oats Gluten-Free
  • 1/2 cup O Organics® Cashews Roasted, Salted
  • 1/2 cup O Organics® Almonds Roasted Unsalted
  • 1 cup O Organics® Banana Chips
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Pre-heat oven to 325 degrees.
  2. In a small food processor, blend 1/4 cup of the banana chips and 1/4 cup oats into a flour like consistency.
  3. Rough chop the remaining banana chips, plus almonds and cashews.
  4. In a large bowl, add the banana chip oat flour, oats, cinnamon salt, and chopped banana chips, almonds, and cashews, and mix until well combined. Set aside.

  5. In a microwave safe bowl, add peanut butter, maple syrup, and coconut oil and microwave in increments of 30 seconds until the coconut oil is melted (about 1 minute). Stir until well-combined. Stir in the vanilla.

  6. Pour the peanut butter mixture into the oats mixture and stir until well-combined.
  7. Spread granola out evenly onto a parchment lined baking sheet.
  8. Bake for 25-30 minutes or until the granola is golden brown. Do not stir or mix while baking (this will allow the granola to form big clusters and become crispy). Allow to cool completely.
  9. Break granola into chunks.
  10. Serve and enjoy!
