Strawberry Honey and Ricotta Toast

I’m toasting’ to the weekend!

Literally.

With these delicious strawberry honey ricotta toasts.

I’m sort of obsessed with toast. And usually I take the savory route. The basic route. Avocado toast.

I mean who doesn’t love a good piece of avocado toast (well my father in law, and I’m determined to convince him to love avocado and avocado toast….a story for another day!)

But today, on this lovely sunny Friday, I decided to mix it up a little bit and go in a sweet direction.

My inspiration were these beautiful strawberries I picked up from Whole Foods last weekend.

It’s finally berry season again and I couldn’t be more excited. I LOVE berries. I eat a yogurt parfait almost every day and I need fresh berries in it to make it feel complete.

I buy berries all year long, even when they are out of season and way too expensive.  I know I shouldn’t or at least buy the frozen berries. But there is something about a juicy, ripe fresh berry I cannot resist. The frozen just aren’t the same.

Now that berries are back in season AND on sale. Well, naturally, I did a little happy dance at the store.

….and I created this delicious new breakfast treat.

Let’s get to cooking. 

This is super quick and easy to make. Perfect for breakfast or a quick flavorful snack.

First, we will start with the ricotta spread. It’s a combination of ricotta, orange juice and zest, honey, and a little cardamom. Cardamom has a lovely but strong flavor, of mint, lemon, with a hint of smokiness. That is why I only use a tiny bit – about an 1/8 teaspoon. The cardamom adds another depth of flavor and a citrusy pop, but too much will overpower the other flavors in the dish.

Next, toast your bread. I used a whole grain bread with seeds on the outside from Whole Foods. It’s nutty and the seeds give it a nice texture.

Spread the spiced ricotta on the toasted bread. Top with sliced strawberries, basil, and a drizzle of honey. I also added a little extra orange zest for color and a pop of freshness.

That’s all there is to it. You have a delicious treat in under ten minutes.

And this toast is packed full of flavor. The ricotta is creamy and tangy,  perfectly sweet and floral from the honey, with subtle hints of orange.  The cardamom gives it a nice unexpected flavor twist and also cuts through the sweetness.

The juicy strawberries pair perfectly with the creamy ricotta. I mean, berries and cream are a match made in heaven.

….and the extra drizzle of honey ….magic!

Strawberry Honey Ricotta Toast

Ingredients

  • 1/2 cup part-skim ricotta
  • 1 1/2 tablespoons fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 1 1/2 teaspoons honey more for drizzling
  • 1/8 teaspoon cardamom
  • pinch of sea salt
  • 4 pieces of whole wheat toast
  • 1/4 cup thinly sliced strawberries

Instructions

  1. Combine the ricotta, orange juice and zest, honey, cardamom, and pinch of sea salt. Stir well.
  2. Toast the whole wheat bread.
  3. Slather on desired amount of ricotta spread. Top with sliced strawberries, a drizzle of honey, and extra orange zest.
  4. Serve and enjoy!
