In a medium sauce pot, add the unsweetened vanilla almond milk and pinch salt. Bring the mixture to a gentle boil over medium-high heat. Add the oats, lower the temperature slightly, and cook for 6-10 minutes or until the oats have absorbed the milk and become plump and tender.

Add the maple syrup, brown sugar (or coconut sugar), cinnamon and vanilla and stir till combine.

While the oats cook, melt the plant-based butter in a medium skillet over medium heat. Add the diced apples and sautéed for 6-8 minutes or until slightly browned. Add in the brown sugar (or coconut sugar), cinnamon, maple syrup, and pinch salt and stir to combine. Remove from heat.

Divide the oats among 2-3 bowls. Top with apples, almond butter and granola.
