Apple Walnut Coffee Cake with Honey Ginger Glaze

A delectable coffee cake studded with honey crisp apples, topped with a walnut cinnamon streusel, and finished with a sweet honey ginger glaze. It sounds involved but its actually quick & easy since its made with Foodstirs organic baking mixes!

  • 1 box Foodstirs organic warm apple spice cake mix
  • 1/3 cup almond milk
  • 1/3 cup greek yogurt
  • 1/2 cup melted butter
  • 1 honey crisp apple diced
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice

Streusel Topping

  • 1/3 cup crushed walnuts
  • 1 1/2 tablespoons softened butter
  • 1/2 teaspoon cinnamon
  • pouch streusel topping that came with baking mix


  • 2/3 cup powdered sugar
  • 1 tablespoon honey
  • 1 tablespoon almond milk
  • Pinch ground ginger
  • Pinch of salt


  1. Pre-heat oven to 350 degrees. Grease a 8x8 pan. I also recommended lining it with parchment paper for easier removal.
  2. Make cake according to package instructions. Mix the apples with 1/2 teaspoon cinnamon and 1/4 teaspoon allspice. Fold in the diced apples to the batter. Pour cake batter into the greased baking dish. 

  3. For streusel topping, combine the streusel topping contained in box, 1/3 cup crushed walnuts, 1/2 teaspoon cinnamon, and 1 1/2 tablespoons softened butter until you have a crumbly mixture. Pour streusel topping on top of the cake.
  4. Bake for 45-50 minutes (the addition of apples increases the baking time on the box slightly).
  5. Once baked, remove from oven and allow to cool completely before removing from pan.
  6. To make the glaze, combine all the glaze ingredients and stir until smooth. Drizzle over cake.
  7. Cut, serve, and enjoy!
