Melting Sweet Potatoes with Maple Bacon Brown Butter

An elevated and flavorful take on sweet potatoes, perfect for Thanksgiving or any weeknight meal!

Ingredients

  • 4 medium sweet potatoes peeled and cut into 1-inch rounds, about 2 pounds
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • Pepper to taste
  • ½ teaspoon cinnamon
  • 3/4 cup low-sodium vegetable or chicken broth
  • 2 tablespoons unsalted butter
  • 3 tablespoons maple syrup
  • 1 tablespoon sage chopped
  • ½ cup chopped cooked bacon
  • 2 tablespoons chopped pecans

Instructions

  1. Pre-heat the oven to 450 degrees.
  2. Toss together the sweet potatoes, oil, salt, pepper and cinnamon in a large bowl or ziplock bag. Arrange in a single layer in a 9-by-13-inch metal baking pan. Roast for about 25-30 minutes, flipping halfway through.
  3. Pour broth over roasted sweet potatoes. Cook for another 25-30 minutes, or until sweet potatoes are tender and most of the liquid is absorbed.

  4. Meanwhile, melt butter in a small skillet over medium heat. Cook until it starts to brown, 2-4 minutes. Lower to medium low and carefully add maple syrup and cook for another 30 seconds.

  5. Remove from heat and add chopped sage, pecans and bacon. Spoon brown butter over cooked sweet potatoes right before serving.
  6. Serve and enjoy!
