Honey Bourbon Coconut Milk Ice Cream with Roasted Peaches

Ingredients

Honey Bourbon Ice Cream

  • 2 can full fat coconut milk
  • 1 tablespoon melted coconut oil
  • 1/3 cup honey
  • 2 tablespoons good quality bourbon
  • 1 teaspoon vanilla

Roasted Peaches

  • 3 peaches cut in half
  • ½ tablespoon olive oil
  • Dash cinnamon
  • Drizzle of honey
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 400 degrees. Drizzle cut peaches with olive oil, cinnamon, and honey. Roast for 25-30 minutes, or until tops of peaches caramelize and the peaches soften. Allow to come to room temperature. Cut the peaches into chunks. Store in fridge until ready to add to ice cream.
  2. In a blender, combine all of the ice cream ingredients and blend until smooth. Set mixture in fridge for at least an hour so the mixture will become cold. Add mixture to prepared ice cream machine and make ice cream according to the machine's instructions.
  3. Fold peaches into ice cream.
  4. Can eat immediately (it will be a soft style ice cream consistency)
  5. If prefer a firmer ice cream or storing extras, pour ice cream into a bread pan and allow to freeze for at least six hours to overnight.
  6. When ready to serve, allow the frozen ice cream to thaw for at least ten minutes before serving scooping.
  7. Scoop desired amount of ice cream into bowl or on a cone and enjoy!!
