Healthy Peanut Butter Banana Chocolate Chip Waffles

Healthy banana waffles packed with peanut butter flavor, studded with ripe bananas, and made extra special with melty dark chocolate bits.

Ingredients

  • 3/4 cup oat flour
  • 1/4 cup peanut butter powder
  • 1 cup whole wheat pastry flour or regular whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs room temperature
  • 2 overripe bananas
  • 2 tablespoons coconut sugar
  • 1/4 cup coconut oil melted
  • 1 1/4 cup almond milk or milk of choice room temperature
  • 1/2 cup dark chocolate chips
  • Maple syrup and peanut butter for topping

Instructions

  1. In a large bowl. whisk together all of the dry ingredients, including coconut sugar.

  2. In a separate bowl, mash the ripe bananas. Add in remaining wet ingredients and mix until well incorporated. Pour the wet ingredients Into the dry ingredients and whisk until blended.

  3. Gently fold in the dark chocolate chips.

  4. Allow the batter to rest for 10 minutes.

  5. Ladle the batter into a preheated waffle iron and cook until golden brown, about 3-5 minutes.

  6. Top with creamy peanut butter and maple syrup. Serve and enjoy!

Recipe Notes

These waffle freeze great. Just put them on a baking sheet spread out so they are not touching one another and freeze for at least 4 hour. Then transfer to ziplock bag or airtight container and store in freezer. When ready to eat, just pop them in the toaster or 350 degree oven for 3-5 minutes or until warmed and crispy again.
