Spring Cobb Salad with Avocado Green Goddess Dressing

A fresh, vibrant take on the traditional cobb salad.

Ingredients

Avocado Green Goddess

  • 1 large ripe avocado
  • Juice of one medium lemon 2-3 tablespoons
  • 2 green onion stalks just the green bottom part
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 4-5 large basil leaves
  • 3 tablespoons olive oil
  • 1/2 teasooon salt
  • 1 teaspoon whoreshtire
  • 1/4 teaspoon agave
  • 2-3 garlic cloves
  • 2-4 tablespoons water

Cobb Salad

  • 1 head of romaine chopped
  • 2-3 tablespoons herb goat cheese
  • 1/2 cup cubed chicken breast
  • 3-4 slices bacon chopped
  • 1/2 cup snap peas
  • 2-3 radishes sliced thin
  • 1 large carrot cut into ribbons
  • Whites of the green onions not used in the dressing sliced
  • 1/4 cup honey roasted almonds
  • 1/3-1/2 cup dressing

Instructions

  1. In a small food processor, add all of the dressing ingredients, except, water and blend until smooth. Add water, 1 tablespoon at a time, until you reach you desired consistency. Set aside.

  2. In a large salad bowl, add the chopped romaine lettuce. Top with all the salad toppings and dress with desired amount of dressing. Toss so the salad is well-dressed. Serve and enjoy!
