Almond Butter Overnight Oat Parfaits

Ingredients

Overnight Oats

  • 1 1/2 cups old fashioned oats I used a gluten-free kind
  • 1 1/2 cups + 1/4 cup almond milk
  • 3 tablespoons almond butter
  • 3-4 tablespoons date syrup or maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Quick Raspberry Jam

  • 1/2 cup raspberries
  • 1 teaspoon water
  • 1 teaspoon coconut sugar

Additional toppings

  • 3 tablespoons almond butter
  • 1 banana sliced
  • 1/2 cup blueberries
  • 1 tablespoon chia seeds

Instructions

  1. In a large bowl, mix together the milk, almond butter, syrup**, and vanilla and stir until well-mixed and creamy.
  2. Pour in oats, cinnamon, and salt and milk until all the ingredients are well-combined. Place in fridge for the oats to set up (at least 4 hours, preferably overnight).
  3. For the quick raspberry jam, combine raspberries, coconut sugar, and water in a bowl and allow to sit for 5 minutes so the raspberries release their juices. Use a fork to mash the raspberries until they are broken down but still chunky.
  4. To build the parfaits, layer the overnight oats, raspberry jam, almond butter, and other fruit until the glass is filled. Top with chia seeds if desired. Continue until all the ingredients are used (3-4 parfaits).
  5. Serve and enjoy!

Recipe Notes

First add 3 tablespoons of syrup and taste. If you want it sweeter, add one more tablespoon

These store for 4-5 days in an airtight container in the fridge.
