Simple Brussel Sprout Salad with Lemon Dijon Vinaigrette

A 4-ingredients, super healthy and fresh salad drizzled with a bright lemon dressing. Perfect for a side dish or add chicken or shrimp to make it a complete meal!

Brussel Sprout Salad

  • 2 cup shaved raw Brussel sprouts
  • 1/3 cup pomegranate seeds
  • 1/3 cup shaved parmesan
  • 1/3 cup shaved almonds
  • Desired amount of dressing

Lemon Dijon Vinaigrette

  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon
  • 2 teaspoons honey
  • 4 tablespoons olive oil
  • 1 teaspoon fresh garlic
  • Salt and pepper to taste


  1. Add the shaved Brussel sprouts to a salad bowl. Top with pomegranates, parmesan cheese, and almonds.
  2. To male dressing, whisk together all of the dressing ingredients, besides olive oil, until smooth and well-combined. Slowly drizzle in olive oil while continuing until all the oil is used.
  3. Drizzle desired amount of dressing on salad and toss until it is will coated.
  4. Serve and enjoy!
