Baked Blueberry Banana Oatmeal

A healthy, easy to make breakfast treat that features ripe bananas, fresh blueberries, wholesome oats, natural refined free sugars, crunchy walnuts, and warming spices. 

Ingredients

  • 2 cup old fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 1 very ripe banana mashed
  • 1 egg
  • ½ Greek yogurt
  • ½ cup dairy free milk
  • 1 teaspoon vanilla
  • 1/3 cup maple
  • 1 tablespoon coconut sugar
  • ½ cup blueberries
  • ½ cup chopped walnuts
  • 1 banana sliced for topping

Instructions

  1. Grease an small baking dish (I used a 9x6). Preheat oven to 400.
  2. In a large bowl, whisk the egg and coconut sugar. Add in the remaining wet ingredients and stir until smooth and well-incorporated.
  3. Add in the oats, baking powder, salt, and cinnamon. Gently mix the dry ingredients into the wet ingredients.
  4. Fold in walnuts and blueberries.
  5. Pour batter into the greased baking dish. Top with sliced bananas.
  6. Bake for 25-30 minutes or until it is set and golden brown on top.*

Recipe Notes

*If the top starts to brown too much but the oatmeal is still runny (not yet set), top it with foil and continue to bake until completely cooked. The foil will prevent the top from browning in further.

Oatmeal can be stored int he fridge. It eat well cold. I also love to top it will a dollop of peanut butter and a drizzle maple and microwave it for 30 seconds - it makes it warm, gooey, and delicious!
