Avocado Caprese Pasta Salad

This avocado caprese pasta salad is bright, delicious, colorful, healthy and easy. So perfect for summer!

  • 5-6 cups arugula and spinach mix
  • 6 ounces mozzarella balls
  • 4 cups cooked and cooled cavatappi or rotini pasta I used Banza
  • 1 large avocado diced
  • 1 cup cherry tomatoes
  • ¼ red onion finely diced
  • ¼ cup balsamic glaze
  • ¼ cup olive oil
  • Salt and pepper to taste
  • 5-6 large basil leaves chopped


  1. In a large bowl, add all of the ingredients. Drizzle on balsamic glaze and olive oil.

  2. Season with salt and pepper.

  3. Toss until fully mixed. Serve right away or chill slightly.
