Peanut Butter Chocolate Puffed Millet Bars

Ingredients

  • 1/2 cup + 2 tablespoons smooth peanut butter
  • 1/3 cup honey or agave
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 4 cups muffed millet or brown rice cereal
  • 1 1/4 cup semi-sweet chocolate chips
  • 1/2 tablespoon of coconut oil

Instructions

  1. Grease an 8x8 square pan and line with a piece of parchment paper.
  2. In a large microwave safe bowl, add the peanut butter, honey/agave, and coconut oil and heat in microwave for about 45 seconds or until the coconut oil is melted. Stir until the mixture is smooth.
  3. Stir in the vanilla and salt.
  4. Add in puffed millet and stir until it is fully coated in the peanut butter mixture.
  5. Pour the mixture into the greased pan and press down so bottom of the pan is completely covered. Place in fridge to set for 5 minutes.
  6. Microwave chocolate and coconut oil, on 50% powder, stirring every 30 seconds. until chocolate is fully melted, about 1 minutes.
  7. Pour chocolate mixture on top of peanut butter mixture and evenly spread.
  8. Sprinkle with unicorn sprinkles.
  9. Place inn fridge to set for at least 2 hours.
  10. Cut into 9 or 16 bars.
  11. Serve and enjoy!

Recipe Notes

If you cannot find puffed millet, you can use brown rice cereal instead. Brown rice cereal will result in a crunchier texture whereas puffed millet will result in a chewier texture.
