What is a superfood?
Superfoods are whole foods (real, unprocessed foods) that are thought to be nutritionally dense with the supposed capacity to positively impact our health. It’s important to note that the term “superfood” is more of a marketing term than an actual medical term. Regardless, these health foods are packed with healthy fats, antioxidants, vitamins, mineral, and other nutrients, therefore, good for our diets (but should be consumed in moderation, just like anything else!).

What superfoods are in these truffles?
- Almonds. Packed with protein, fiber, magnesium, and vitamin E.
- Coconut Oil. High in healthy saturated fat and it a great fat/oil alternative for cooking and baking.
- Dark Chocolate. High in antioxidants
- Hemp Seeds. Full of protein, healthy fats, amino acids, vitamin E, and minerals.
- Walnuts. Walnuts can help curb cravings and are high in omega-3 fats acids.

How to make chocolate superfood truffle?
These are easy to make and perfect for weekend meal prep!
First, put the dates in a food processor and blend until it form a thick paste. Then add in the walnuts, hemp seeds, almond butter (or nut butter of choice), cocoa powder, almond milk, and vanilla and pulse until it forms a wet crumbly mixture.
Next, using a cookie scoop or measuring spoon, scoop out the truffle batter and roll into balls. Set them in the freezer for about 10 minutes to harden.
Meanwhile, melt the dark chocolate chips and coconut oil in the microwave, on 50% power, for increments of 45 seconds until full melted and smooth.
Finally, dip each truffle into the dark chocolate until fully coated. Sprinkle with sea salt. Set on a parchment lined baking sheet. Continue this process until all truffles are coated in chocolate. Sweet back in freezer for 10-15 minuets, or until the dark chocolate is fully hardened.

Superfood Chocolate Truffles
Ingredients
- 1 cup dates
- 1 cup walnuts
- 3 tablespoons cocoa powder or cacao powder
- 2 tablespoons hemp seeds
- 2 tablespoons almond butter or nut butter of choice
- 2 tablespoons almond milk
- 1 teaspoon vanilla
- 1/2 cup dark chocolate chips I use lily's or enjoy life
- 1/2 tablespoon coconut oil
Instructions
-
In a food processor, add the dates and blend until it forms a thick paste. Add in walnuts through vanilla and pulse until all the ingredients are well-combined and it forms a wet-crumbly mixture.
-
Using a small cookie scoop or measuring spoon, scoop out about a tablespoon of the date mixture and form into balls. It should create around 12-15 balls. Set in freezer for 10 minutes.
-
Meanwhile, add the dark chocolate chips and coconut oil to a microwave safe bowl and microwave, on 50% power, in increments of 45 seconds, until fully melted and smooth.
-
Dip each date ball into the melted chocolate until the whole ball is coated and set on parchment lined sheet tray. Put coated date balls into the freezer for 10-15 minutes to set up so the dark chocolate is hardened
-
Extra Decorative Step. To make the superfood truffles even prettier, you can drizzle over any leftover melted dark chocolate over the truffle to create a cool design on each truffle. This is not a necessary step, purely aesthetic.
