Peanut Butter Chocolate Puffed Millet Bars are a healthy, fun, delicious treat that uses only pantry staples to make and quick to whip together. It’s also vegan friendly, gluten-free, and refined-sugar free.

Peanut Butter Chocolate Puffed Millet Bars
Last weekend, I got the urge to bake a new sweet treat. Since we are supposed to limit trips to the grocery store and stay home as much as possible, I decided to make a treat using things I already had at home in my pantry.
I had some pretty basic pantry staples, like puffed millet (similar to rice cereal), peanut butter, semi-sweet chocolate trips, and sprinkles. I put all these ingredients together and it turned into a very delicious, super cute treat: peanut butter chocolate puffed millet bars.
These bars are rich and delicious from the peanut butter and chocolate, perfectly sweet from the agave, a little chewy and surprisingly light from the puffed millet, and little crunchy and extra special from the unicorn sprinkle. These bars are also vegan friendly (if you use agave instead of honey), gluten-free, and refined-sugar free.

These bars are made from simple, nutritious ingredients:
- puffed millet
- honey (agave if vegan)
- peanut butter
- coconut oil
- semi-sweet chocolate, I used lily’s
- unicorn spinkles, makes these fun and adorable

what is puffed millet
Muffed millet is a type of grain, usually sold as a breakfast cereal. In addition to being low in fat, puffed millet is also gluten-free.
In terms of taste, puffed millet has a mild, slightly nutty flavor so it pairs well with peanut butter. It has an airy, almost popcorn like texture that gives these bars a nice chewy bite. Also, this delicate, healthy grain makes these bars feel light despite the other rich flavors like peanut butter and chocolate.
If you don’t have or cannot find muffed millet, you can also use brown rice cereal to make these bars. Brown rice cereal will provide a crunchier texture.

how to make these Peanut Butter Chocolate Puffed Millet Bars
First, add the peanut butter, honey (or agave), and coconut oil to a microwave safe bowl and microwave for about a minute or until the coconut oil is melted. Add vanilla and stir until it is smooth.
Next, in a large bowl, add the peanut butter mixture to 4 cups of puffed millet and a pinch a salt. Mix until the peanut butter mixture coats all of the cereal. Then, press the mixture down using your hands or the back of a measuring cup into a greased and parchment lined 8×8 pan. Place in fridge to set while make chocolate layer.
For the chocolate layer, add chocolate chips and coconut oil to a microwave safe bowl on 50% power, stirring every 30 seconds, until chocolate is fully melted, about 1 minute. Pour chocolate mixture on top of peanut butter mixture and evenly spread.
Finally, sprinkle with a generous amount of unicorn sprinkles!!!

Set the bars in the fridge for at least 2 hours to set. Remove from the pan and cut into 9 or 16 squares.

Peanut Butter Chocolate Puffed Millet Bars
A delicous, fun, and heathy treat!
Ingredients
- 1/2 cup + 2 tablespoons smooth peanut butter
- 1/3 cup honey or agave
- 1/4 cup coconut oil
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 4 cups muffed millet or brown rice cereal
- 1 1/4 cup semi-sweet chocolate chips
- 1/2 tablespoon of coconut oil
Instructions

Grease an 8×8 square pan and line with a piece of parchment paper.

In a large microwave safe bowl, add the peanut butter, honey/agave, and coconut oil and heat in microwave for about 45 seconds or until the coconut oil is melted. Stir until the mixture is smooth.

Stir in the vanilla and salt.

Add in puffed millet and stir until it is fully coated in the peanut butter mixture.

Pour the mixture into the greased pan and press down so bottom of the pan is completely covered. Place in fridge to set for 5 minutes.

Microwave chocolate and coconut oil, on 50% powder, stirring every 30 seconds. until chocolate is fully melted, about 1 minutes.

Pour chocolate mixture on top of peanut butter mixture and evenly spread.

Sprinkle with unicorn sprinkles.

Place inn fridge to set for at least 2 hours.

Cut into 9 or 16 bars.

Recipe Notes
If you cannot find puffed millet, you can use brown rice cereal instead. Brown rice cereal will result in a crunchier texture whereas puffed millet will result in a chewier texture.
